What I Ate This Week on Slimming World – Week 2 – My new addition to the blog, where I will share my weekly food diary. This is so much better than just a basic Meal Plan because you will see the food exactly how it was made and enjoyed.
Oh, boy was that a busy week, appointments here and there, delivery's to deal with, our washing machine packed in, so we had to get a new one of those, and also ordered an upright freezer for the garage. I am so fed up with trying to find things in the chest freezer. Plus I love batch cooking and freezing things for another day, so it will be good to organize my freezer and see what I have at a glance. I have added bins for meat and fish, and then have a shelf for tubs of leftovers like soups, chilli etc I have made. The idea is that having those things on hand to defrost and heat up, will mean that even on extremely crazy days like some of the days this week, there will always be something I can grab for a quick meal.
Then on top of all that my eldest ended up off sick for most the week with strep throat so it was spending time with him, he had me on a Marvel Superhero's movie marathon most of those days. We saw Avengers - Infinity war last week (amazing movie btw), so now we are working our way back through all the movies again - In order might I add. That includes all the tv shows that connect to the story lol. It will fill the void until the next movies come out at least. Anyone else a fan?
Plus I had lunch out with a friend who I haven't seen in months, it was so good to see her and have a chat, I first met her when my eldest was about 3 (he is now 11, almost 12) and we have been friends ever since. Sometimes we don't see each other for a while, but when we do get together, the chatting never stops. Lunch was yummy. We both ordered sharing appetizers and shared them. I picked the Asian Lettuce Wraps and she chose a Goat's Cheese and Mushroom dip with nachos and flatbread. So not really on plan, but it could have been a lot worse.
Then towards the weekend, I ended up with Strep throat, ugh!! Normally when I'm ill, I crave all the bad stuff, and with my throat hurting all I wanted was ice-cream, but I was determined to stay on plan. Thank goodness for the stuff I had in the freezer and low syn icecream I could enjoy while on plan. Gotta love Halo top Ice Cream.

Monday
Breakfast:

Recipe: Roasted Cauliflower Frittata
Dinner:
- Leftover Pineapple Pork (S) (2.5 syns)

- Spring Onions (S)
- Additional peppers (S)
- Egg noodles
Recipe: Slow Cooker Pineapple Pork
Added the additional veg to the leftover pineapple pork, then added in some cooked egg noodles and tossed all together until heated through.

I made this for lunch today to last me two days, I will have the other half tomorrow. I sauteed some onion, added in some peppers and zucchini, then added the rice, paprika
Dinner:

- Banana
- Yoghurt (1.5 syns)

- 1.2 tbs of peanut butter
I warm the peanut butter slightly in the microwave so it is softer, then place in a ziplock bag, push down to one corner, then sip off the corner with scissors and pipe it over the top of the toast, it makes a small amount go so much further.

- One Pot Sausage and Rice (2.5 syns)

Leftovers from yesterday
Dinner:
- Cheeseburger Quiche

I had some syn free wedges leftover from last night, so heated those up in the actifry for about 5 minutes and threw in some sliced mushrooms, was perfect with the egg and salsa.
Lunch:
- Asian Chicken Lettuce Wraps
- Goat Cheese Mushroom Dip
Today was lunch out with my friend, and we shared these two appetizers for lunch, so not on plan, but it could of been a whole lot worse, the lettuce wraps were yummy.
Dinner:
- Oven Baked Chicken Thighs
- Sauteed Brussels(S)
- Roasted Butternut Squash (S)
- 1 tbs Crumble Feta (1.5 syn)
Snacks:
- Yoghurt (1.5 syns)
- Berries
- Almond buttercrunch mini cookies (2 syns)

- HEALTHY EXTRA B: NONE (totally forget to have this, but with lunch out today, it wasn't 100% on plan anyway)

FRIDAY

- Scrambled Eggs

Lunch:
- leftover sauteed sprouts and butternut squash (S)
- Golden Whole Grain Quinoa
- Grape Tomatoes (S)
- Feta (part hEa)
The quinoa I just cooked in some chicken stock, really yummy. Always rinse your quinoa first under cold running water, otherwise, it can have a bitter taste once cooked. Then you need double amount of liquid to quinoa. Bring it to a boil, and let it simmer, when water is almost absorbed, add lid, turn off heat and leave for about 10 minutes, then you can fluff up with a fork and serve. Perfect instead of rice or pasta etc.
Dinner:
- Southwestern Turkey Meatballs
- Rice

- ½ cup of Halotop Blueberry Crumble Icecream (4.5 syns)
- Tea/Coffee

I cooked the rice in some chicken stock for flavour. Cook it as per normal, but instead of water use stock.

I was out all day today in the USA at my son's soccer games, so grabbed this salad from the grocery store. I only use half the dressing and didn't add the tortilla strips.

TOTAL WEIGHT LOSS THIS WEEK: 1LB
With the days out and sickness, I am really happy to see a loss on the scales this week, I had convinced myself it was going to be a stay the same or even a small gain.
No soccer games in the US next week, so I really hope I can have a really good week next week. I might even throw in some SP days or at least some SP meals. For me, I always getting better losses when I do that. Too many carbs like pasta, rice etc at every meal can stall my weight loss. Obviously not the case for everyone, so it's important to adjust to what works for you.

Hey Heather - that's probably not a bad thing getting some images of dishy Quarterbacks lol. However, these quarterbacks are a corn snack (like crisps/chips). Darn crisps are my nemesis and it's hard to get low synned ones over here, why is everything in big huge bags? So we got some of these brought over from the UK. They are small bags and low synned, so enough to satisfy my cravings lol.
Thank you, Sandra, I am glad it is giving you some ideas. I always think food diaries can be really useful, recipes are great too, but sometimes seeing ideas for actual meals can help get you out of a rut of the same foods.
