Crispy oven-baked Buffalo Chicken Loaded Fries, tossed in a rich, tangy buffalo-ranch sauce and topped with melted Colby cheese
Ingredients
For the Buffalo Chicken:
- 300g (10.5oz) of cooked shredded chicken breast
- ⅓ cup (80ml) of Franks RedHot Buffalo Sauce
- 4 tablespoons of reduced fat mayonnaise
- 4 tablespoons of fat free Greek yoghurt
- 2 tablespoons of semi skimmed milk
- 1 tablespoon of lemon juice
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- ½ teaspoon of dried dill
- ½ teaspoon of dried parsley
- pinch of salt
For the Fries:
- 1kg (35.2oz) of Russet Potatoes (or similar floury potato)
- 2 teaspoons of olive oil
- 1 teaspoon of salt
- 120g (4.2oz) of colby cheese, grated (or use a mix of red leicester and mozzarella)
- 4 spring onions (green onions), sliced thinly
Instructions
- Prepare the Fries – Cut the potatoes into fries (I leave the skin on, but you can peel them if you prefer). Soak them in ice-cold water for 30 minutes, then rinse and pat completely dry.
- Set Up the Tray – Line an extra-large baking tray (or use two smaller trays) with parchment paper. Add the fries, drizzle with olive oil and salt, toss to coat, then spread them out in an even layer.
- Preheat the Oven – Set the oven to 180°C fan / 200°C / 400°F / Gas Mark 6.
- Bake the Fries – Place the tray in the oven and bake for approximately 45 minutes, flipping the fries a couple of times during cooking, until golden and crisp.
- Make the Ranch Dressing – In a bowl, mix together the mayo, yoghurt, milk, onion powder, garlic powder, lemon juice, dill, parsley, and a pinch of salt.
- Prepare the Buffalo Chicken – Add 6 tablespoons of the ranch dressing to a bowl with the cooked chicken and Franks RedHot Buffalo sauce, mixing until well coated. Thin out the remaining ranch dressing with a little water to make it drizzable.
- Assemble and Bake – Once the fries are cooked, top them with the buffalo chicken and sprinkle over the Colby cheese. Return to the oven and bake for 8-10 minutes, until the cheese is melted.
- Finish and Serve – Sprinkle over the spring onions and drizzle with the remaining ranch dressing. Serve immediately and enjoy!
