Slimming Eats Vegetarian Weekly Meal Plan - Week 8
Here is week 8 of my Vegetarian meal plans for you all. Feel free to come back and leave a comment.
These weekly meal plans take the work out of planning, so all you have to do is cook and enjoy all this amazing food.

The biggest response when deciding to bring these to you each week was to include all meals i.e. Breakfast, Lunch or Dinner, but for those who just want a weekly lunch or dinner plan etc, then you can just ignore the rest.
The majority of my recipes serve 4 people (I am a family of 4 after all), so you may need to double up or half if you are serving more or less.
I don’t always use the full quota of healthy extras and syns in each day, that way you have them free to use as you wish.
At work all day? Then have you thought about investing in a food flask? It is great for taking soups and pasta etc to work with you if you do not have heating facilities and will keep food hot or cold for up to 7 hours.
So here goes with this week’s meal plan:
Monday

Breakfast: Low Syn Crepe Style Pancakes with fruit - 2.5 syns

Lunch: Spicy Sweet Potato, Red Pepper and Carrot Soup - syn free

Dinner: Roasted Vegetable Gratin with rice - HEa and ½ HEb
Total Syns: 2.5 syns
Healthy Extras: HEa and ½ HEb
Tuesday

Breakfast: Scrambled Egg with plum tomatoes - syn free

Lunch: Spicy Sweet Potato, Red Pepper and Carrot Soup - syn free

Dinner: Roasted Vegetable Gratin with Syn Free Chips and salad - HEa and ½ HEb
Total Syns: syn free
Healthy Extras: HEa and ½ HEb
Wednesday

Breakfast: 2 boiled eggs with fruit and yoghurt - syn free

Lunch: Carrot Soup with Cheesy Couscous bites - HEa

Dinner: Vegetable and Bean Stew with Oaty Bread - HEb
Total Syns: syn free
Healthy Extras: HEa and HEb
Thursday

Breakfast: Banana Granola with Mixed Berries and yoghurt - HEb and 3 syns

Lunch: Carrot Soup with Cheesy Couscous bites - HEa

Dinner: Pasta in Creamy Tomato Sauce - 1.5 syns
Total Syns: 4.5
Healthy Extras: HEa and HEb
Friday

Breakfast: Banana Granola with Mixed Berries and yoghurt - HEb and 3 syns

Lunch: Mushroom Omelette with salad - syn free

Dinner: Lasagne (use quorn or green/brown lentils) with salad - HEa and 0.5 syns
Total Syns: 3.5
Healthy Extras: HEa and HEb
Saturday

Breakfast: Pumpkin Pancakes with fruit and maple syrup - HEb and 2.5 syns

Lunch: Leftover Lasagne (use quorn or green/brown lentils) with salad - 1 HEa and 0.5 syns

Dinner: Aubergine, Lentil and Sweet Potato Curry with rice - 1.5 syns
Total Syns: 4.5 syns
Healthy Extras: HEa and HEb
Sunday

Breakfast: Pumpkin Oatmeal with Apple - HEb and part HEa

Lunch: Spicy Potato Wedges with Salad- syn free

Dinner: Lentil Bolognese with salad - syn free
