Apple and Cheese Quinoa Bites
Ingredients
- 200g/7oz of cooked quinoa
- 1 large apple, grated (I recommend using a sweet variety – I used a lady alice)
- 90g/3ozof reduced fat cheddar
- 1 egg, beaten
- olive oil spray
Instructions
- Preheat oven to 180c or 350f
- Add quinoa, apple, cheese and beaten egg to a bowl and mix thoroughly to combine.
- Form into 12 equal size balls or patties and place on a baking tray sprayed with olive oil spray to prevent sticking.
- Bake in the oven until firm and a pale golden colour (approx 30 mins)
- Great served with a salad.
- You could also add some chives or fresh herbs to the mixture for additional flavour.
