Tender Moroccan Chicken with Roasted Sweet Potato Traybake packed with heaps of flavour for a delicious family meal.
Traybakes seem to be my go to this time of year. I love that I can flavour a choice of protein with some spices, add some healthy vegetable place in the oven and then a little while later a complete meal is on the table.
The chicken is so tender and delicious, flavoured with the unique blend of spices such as coriander, cumin, cinnamon, cloves and nutmeg. It's a complete flavour sensation against the yummy sweetness of roasted sweet potato and peppers.
A full and complete meal all cooked all on one tray, is perfect when you want a dish that doesn't involve heaps of cleaning up afterwards. I know after a business day with the kids (especially in the summer holidays when they are off school) and am grateful for tasty easy recipes like this Moroccan Chicken with Roasted Sweet Potato Traybake.
You could add some additional sides too if you want a more substantial meal, but it is seriously perfect and delicious just as it is.

How can I add a ⅓ speed foods to this Moroccan Chicken with Roasted Sweet Potato Traybake?
The yummy recipe already includes leeks, onion and peppers and you really want to increase the speed foods try replacing the sweet potato with butternut squash. Another great choice is to add some greens like sauteed Brussels or green beans.

- Extra Easy - syn free per serving
- Original/SP - syn free per serving (swap the sweet potat0 for butternut squash

Ingredients
- 8 boneless and skinless chicken thighs
- 1 onion, chopped
- 1 leek, sliced
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 large sweet potato, chopped
- ¾ cup of chicken stock
- salt and black pepper
- cooking oil spray
- freshly chopped coriander or parsley.
for the Moroccan Spice Blend:
- 1 tsp of cumin
- 1 tsp of coriander
- 1 tsp of ginger
- 1 tsp of salt
- ½ tsp of paprika
- ½ tsp of cayenne pepper
- pinch of turmeric, cinnamon, ground cloves and nutmeg
Instructions
- Preheat oven to 215c/420f
- Add the chicken thighs to a bowl with the Moroccan Spice Blend and toss to coat.
- Add the chopped onion, leek, peppers and sweet potato to a large baking tray, season with salt and black pepper.
- Spray over the top with cooking oil spray.
- Add the seasoned chicken thighs spaced out between the vegetables.
- Pour in the stock.
- Place in the oven and back for 45 mins, until the chicken is cooked and the vegetables are softened.
- Brush over the top of the vegetables and chicken with the stock in the bottom of the tray halfway through cooking time.
- When ready to serve, sprinkle with chopped coriander or parsley.
- If you are okay with dairy, this is delicious served with a little plain yoghurt on the side, mixed with a little lemon juice and chopped fresh coriander.

Saw this recipe whilst browsing for new meal ideas. Quickly added the ingredients to my shopping list. It was only when I came to prepare the meal later that evening that I noticed leeks have been missed off the ingredients list! Really hope this does not alter that taste too much!
