Delicious garlic mushrooms with bacon sautéed together in a pan and served over sourdough toast with a perfectly cooked poached egg. Great for breakfast or lunch, this is one of those simple dishes that always feels a little bit special.

I love mushrooms, they are a great addition to any meal, but my all time favourite is for breakfast and these sautéed garlic mushrooms with bacon are just delicious. When I can get my hands on baby king oysters, I like to use those mixed with some regular mushrooms for the ultimate flavour, but you can use any mushrooms you like. A mixture of varieties just adds even better flavour.

Ingredients Notes
To make this recipe you will need the following ingredients:
- Bread of choice: I used multigrain sourdough, which works really well with the garlic mushrooms and bacon, but any bread you like is fine here.
- Butter: Brushed onto the bread before toasting for extra flavour and a lovely golden finish.
- Mushrooms: The star of the dish. I like to chop them quite small so they cook down nicely. Using two different types of mushrooms adds even more flavour and texture.
- Shallot: Adds a mild sweetness that works really well with the mushrooms and garlic.
- Garlic: A must for that delicious savoury flavour in the mushrooms.
- Smoked streaky bacon: Adds a salty, smoky flavour that pairs perfectly with the mushrooms.
- Olive oil spray: For frying everything off without needing lots of oil.
- Egg: A poached egg on top finishes this off perfectly and adds a lovely rich, silky yolk.
- Salt and black pepper: Important for seasoning and bringing all the flavours together.

Variations and Subsitutes
For a creamy version, just stir a spoonful of light cream cheese into the mushrooms once cooked and let it melt through. It's also really delicious with some sliced avocado or a little guacamole under the mushrooms and bacon on the toast.
A small sprinkle of finely grated parmesan on top is a great addition too for an extra savoury finish and a drizzle of hot honey for a spicy sweet heat. You can also swap the shallot for a little finely diced onion, use any bread you like, and mix up the mushrooms depending on what you can get, as a mixture of varieties will always add the best flavour. You can also swap the poached egg for fried or scrambled or skip the egg all together, but I love how the soft yolk creates a sauce over the bacon.
Tips for the Perfect Poached Egg
Most people can feel a bit overwhelmed trying to cook a poached egg, but I find my method really easy and always results in a perfectly cooked poached egg.
- Just Bring a saucepan of water to a rapid boil, then turn down heat a littler so that the water is no longer vigorously boiling.
- Stir the water to create a vortex
- Crack an egg into a shallow bowl and lower it gently into middle of the vortex in the water.
- Leave for approx 3 mins and then remove with a slotted spoon onto kitchen pan. I prefer to do this to remove any excess water.
Some methods add vinegar to the water, but if your eggs are fresh it's really not needed.
