Breakfast Roll Bakes - delicious baked wholemeal rolls filled with a yummy tomato sauce and baked egg topped with melted cheese. A perfect filling start to your day.
What is not to love? Especially because you can enjoy two of these in the morning using your healthy extras with a nice cup of tea or coffee.
But there are two rolls there per serving and you can only have one as a Healthy Extra B? Well actually 60g of any wholemeal (whole wheat bread) is a Healthy Extra B choice - here we use 2 small ones per person which weigh 57g each, which is more than the 60g allowance for the two. However you cut out the centre reducing the weight to wait for it 60g!!!
Just choose wholemeal rolls that are not more than the 60g allowance each and when you remove the centre, both rolls should weigh 60g :).
So there you have it, that's how you get to enjoy two of these bad boys.
But before you go throwing out those bits of bread from the middle of the roll, why not keep it, blitz it to breadcrumbs in a food processor, lightly toast and you can use it for breadcrumbs for my KFC Chicken Feast or these yummy Chicken Goujons tomorrow.

How can I add a ⅓ speed foods to these Breakfast Roll Bakes?
Ideally, you should always try and aim for ⅓ speed food with your meals, these foods will fill you up, are nutrient dense and are likely to stop the cravings for things in between meals.
I didn't add any with these, but if you find yourself often hungry in between meals, then serve with a small bowl of some fresh speed fruits or even these amazing garlic sauteed mushrooms - yum!!

Syn Free Breakfast Roll Bakes
Breakfast Roll Bakes - delicious baked wholemeal rolls filled with a yummy tomato sauce and baked egg topped with melted cheese. A perfect filling start to your day.
Ingredients
- 4 Wholemeal (Whole Wheat) Rolls - weighing less than 60/2oz each
- 4 eggs
- 60g/2oz of cheddar - grated
- ¾ cup of crushed tomatoes (or passata)
- 1 tbs of tomato paste
- pinch of fresh basil
- ¼ tsp of onion powder
- ¼ tsp of garlic powder
- fresh parsley
- salt and black pepper
- cooking oil spray
Instructions
- Preheat oven to 200c/400f
- Remove the centre from each roll to make bread roll bowls (two rolls should then weigh 60g) - you can save the removed bread to make breadcrumbs.
- Spray the outside and inside of the bread roll bowl with cooking oil spray
- Place on a baking tray lined with parchment paper and bake until the roll is golden inside and crisp on the exterior.
- Mix the crushed tomato, tomato paste, basil, garlic powder and onion powder together in a bowl.
- Then spoon a ¼ of it into each baked bread bowl.
- Crack an egg into each bread bowl
- Top with the grated cheddar and bake for approx 8-10 minutes, whites of egg should be set but the yolks still runny (if you don't like runny yolks, continue to bake for a little longer)
- Sprinkle with chopped parsley and season the top with salt and black pepper.
- Enjoy!!

This recipe is vegetarian, Slimming World and Weight Watchers friendly.
- Extra Easy - 1 HEa and 1 HEb per serving
- Green/Vegetarian - 1 HEa and 1 HEb per serving
- Original/SP - 1 HEa and 1 HEb per serving
- WW Smart Points - 10 per serving (or 5 for one breakfast roll bake).
Variation: add some ham or bacon to the bottom if not vegetarian.

I love this! I just cooked it. I added bacon and mushrooms (grilled first). Added them to the roll once they were done in the oven. Added the tinned tomatoes and cheese on top (I left the egg out) but it was so good! Loved it! Thanks for sharing! I have been looking for different breakfasts recently and this has been a treat!
