This was one of those genius moments. I was about to cook a full breakfast when I spotted some sausages that needed to be used up. So I layered all the components of a great breakfast and the result was amazing!!

The cheddar on top is totally optional, you can omit, but personally, I find it just adds that little bit extra to this.

Want to make this even more epic? Add in a layer of these Hash Browns broken up into pieces - yum!!
How can I add a ⅓ vegetables to this Breakfast Quiche?
There are some mushrooms, onion and tomato in the quiche that will add to your ⅓ vegetables, but you can up those even further by adding in some additional vegetables like some chopped fresh spinach or serve it alongside these balsamic tomatoes which are delicious.

Can this be eaten as part of the Green plan too? x
Siobhan (Slimming Eats) says
it sure can, but you would either need to syn the sausages, leave them out or use a vegetarian alternative.
Melanie Anne Ross says
Thanks, thought that was the case but just wanted to be sure 🙂
Melanie Anne Ross says
Made this for breakfast this morning and used some Linda McCartney vegetarian sausages to keep it free on Green... it was lovely... another winner 🙂

Can't get enough of this. Always loved quiche and even though I don't like cottage cheese this rocks. Fast and easy to make. Even yummier when made with onions oven roasted in their skins. Works well with turkey bacon too and that lowers the syns.
Chris says
Where does the cottage cheese fit in? It is not mentioned in the ingredients at all.
Shevy (Slimming Eats) says
No cottage cheese in the recipe any more, it’s just as per the recipe.
JM says
You say this serves 4 but your photos show it divided by 7 - which is it please? Can we eat 1/4 of the whole? I'm confused......
Shevy (Slimming Eats) says
A quarter of the whole Quiche is 1 serving
Rob says
Made this with vegetarian sausages and left out the onion. The kids helped. We really enjoyed it.

Yummy quiche! I used some leftover cooked meatballs (Slimming World, syn free, from Iceland) instead of sausages. Will make this again.
Anne says
Can this be frozen in individual slices and reheated?
Shevy (Slimming Eats) says

claire l says
