Garlic Mushrooms with Bacon on Toast

If you struggle to get a 1/3 superfree into your breakfast, then this is a great dish to try. Full of flavour and nice and filling to keep you going until lunch time!!

Garlic Mushrooms with Bacon on Toast

Slimming Eats Recipe

Serves 2

Extra Easy –  1 HEb and 3 syns per serving

Original – 1 HEb and 3 syns per serving

Ingredients

4 slices of Whole wheat bread (2x57g)(2 HEb’s)

300g of mushrooms

2 laughing cow lights (5 syns) * see note

1 clove of garlic, crushed

1 teaspoon of wholegrain mustard (0.5 syns)

Pam or frylight spray

4 slices of back bacon (fat removed)

100ml of chicken stock

NOTE: You can can use the laughing cow light as part of your HEa if you would prefer not to use syns, but as the amount used in this recipe is not enough for 1 HEa serving, be sure to get the rest of your HEa elsewhere into your day.

 

Method

Cook bacon to your liking and toast bread

Spray a frying pan over a medium with some Pam or Frylight spray  and add mushrooms, and garlic

Add a little bit of the chicken stock at a time and cook mushrooms until they are nice and golden.

Mix the laughing cow lights with a tiny bit of hot water to melt into a smooth liquid (not too thick and not too watery).

Reduce heat on mushrooms and stir in the mustard and then the laughing cow light mixture.

Serve on top of your toast and bacon.

A great dish for breakfast or lunch!!

    Made this recipe this morning.  Laughing Cow Lights are 3.5 syns in the U.S. for 2 wedges and I used 1 tsp of Garlic Puree (1.5 syns).  I excluded the wholegrain mustard.  So 5 syns for the entire recipe, 2.5 syns per serving.  It was absolutely fabulous!  Thanks Britmum!

    If I don’t have the laughing cow lights (I’m allergic) is there an alternative? Or if I just leave them out will this just reduce the syns?

    yes you can leave it out, the laughing cow’s just make it creamy.
