Coriander and Chilli Lamb Meatballs with a Spicy Tomato Sauce

If you like spicy food, then you will love this, it has a sweet and spicy taste to it and is really delicious. The mint yoghurt, works well too.

Coriander and Chilli Lamb Meatballs

Slimming Eats Recipe

Serves 4

Original – 0.5 syns per serving (without rice)

Extra Easy – 0.5 syns per serving

Ingredients

600g of extra lean lamb mince (or substitute with extra lean beef or turkey mince)

fresh coriander

1 red chilli, finely chopped

salt

600ml of passata

1 onion, chopped

1 large carrot, chopped

fresh ginger, grated

4 cloves of garlic, crushed

2 teaspoons of cumin

2 teaspoons of coriander

1 teaspoon of chilli powder

1 teaspoon of paprika

1/2 teaspoon of cayenne pepper

2 level teaspoons of sugar (2 syns) (or substitute with sweetener to make this syn free)

Frylight or Pam spray.

Method

In  large bowl, add the lamb mince, a few tablespoons of freshly chopped coriander, 1 finely chopped red chilli, 1 clove of garlic, some freshly grated ginger and salt and pepper and bind it all together. Form into approx 16 meatballs.

Spray a frying pan with some Frylight or Pam spray, and brown the meatballs. Then set aside.

Add the onion, remaining garlic, some fresh ginger, and the carrot to the frying pan and cook for 2-3 mins until softened.

Add the passata, all the spices and sugar and bring to the boil. Reduce heat, return meatballs to the pan, cover and simmer for approx 30 minutes.

Top with some freshly chopped coriander.

Serve with steamed basmati rice and some mint yoghurt (fat free yoghurt, with fresh mint, lemon juice and a little sugar/sweetener).

    I made these tonight, they were delicious! I wasn’t sure, as I had beef mince, rather than lamb. Plus I didn’ have fresh ginger and coriander – but I used the dried variety and it still worked.

    These are absolutely delish, I made them with beef mince as I could not get lamb mince and they are so tasty and rich. I would really recommend this recipe. Yet another slimming eats triump I love this website :)

    I made these last night and they were really tasty. Like some of the others, I used beef mince instead of lamb but only because hubby doesn’t like lamb!

    Would I be correct in supposing that mine were syn free as I used granulated sweetner instead of ordinary sugar (diabetic).

    Wow!  What a fantastic recipe, the meatballs were fantastic-not greasy at all like some meatballs can be and the tomato sauce was gorgeous.  Will definitely be making this again!
