Delicious Tangy Spicy Chicken stuffed with Feta Cheese and Salsa for an easy meal packed with flavour.

Whenever chicken breasts are on the menu for dinner, I love to add a filling to help keep the chicken breasts tender. Feta and Salsa go perfectly together too. The saltiness of the feta cheese against the tangy feta is just delicious.

Super quick to make, so perfect for a weekday meal when you get home from work. It really is just a case of seasoning the chicken, making a pocket, in the chicken breast, stuffing with the feta and salsa and baking in the oven. All done in less than 30 mins.

If making this Spicy Chicken stuffed with Feta Cheese and Salsa just for adults, you can use a hot salsa too, or using a mild if serving for kids. I love to use a chunky salsa.

You can totally make your own salsa, but the store bought one I use has no added sugar, is super low in syns, so it super convenient for this quick meal.

How can I add a 1/3 speed foods to this Spicy Chicken stuffed with Feta Cheese and Salsa?

I like to serve this with some roasted butternut squash cubes seasoning with salt, paprika and black pepper and baby green salad leaves, it pairs really well with the stuffed chicken, but rice, quinoa and even pasta would also go well too with your own choice of vegetables. The chicken on its own is also suitable for an SP day, just make sure the sides you choose to go along with it, are SP friendly.

Spicy Chicken Stuffed with Feta Cheese and Salsa

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Delicious Tangy Spicy Chicken stuffed with Feta and Salsa an easy meal packed with flavour.

Ingredients

Chicken

  • 2 Chicken Breasts (approx 200g/7oz each)
  • 90g/3.2oz of Feta Cheese - 2 HEa's
  • 4 tbs of salsa - 1 san
  • Cooking oil spray
  • chopped parsley

Seasoning

  • 1 tsp of paprika
  • 1/2 tsp of garlic powder
  • 1/2 tsp of onion powder
  • pinch of cayenne (optional)
  • salt and black pepper

Instructions

  1. Add the seasoning ingredients to a bowl and mix to combine
  2. Preheat oven to 200c/400f
  3. Add the seasoning to the chicken breasts on both sides.
  4. Make a slit in the chicken breasts to form a pocket and stuff each chicken breast with 45g of feta and two tbs of salsa
  5. Place in an oven proof dish and spray over the top with cooking oil spray
  6. Bake for approx 20 minutes until chicken is cooked through
  7. Serve with your choice of sides.

This recipe is gluten free, Slimming World and Weight Watchers friendly

  • Extra Easy - 1 HEa and 0.5 Syns per serving
  • WW Smart Points - 5 per serving

    I made this recipe a few nights ago but instead of using regular Mexican salsa, I made what I guess could be called Greek “salsa”. I used red onions, roasted red peppers, balsamic vinegar, olive oil, tomatoes, garlic and olives. I mixed a quarter of the feta with some herbs and it turned out magical! Thanks for the inspiration!

    Just had this for dinner tonight…….lovely mmm mmm mmm!!
    I could only fit in 1 tablespoon of salsa and half the feta per portion though so less HA’s and less sins!!
    Was still really good and will be a firm favourite from now on….thanks Britmum!!

    I needed something quick and easy but was a bit worried that hubby doesn’t like stuffed chicken, anyway bit the bullet made my own salsa and then did this dish and served it up, amazing clean plate from himself. A definite winner
