MONDAY 7TH APRIL 2014 – EXTRA EASY
Breakfast
2 eggs fried over mini butternut squash and zucchini hash browns
- (grated zucchini and butternut squash, fried until lightly golden in rings on a pan, then carefully flipped, keeping the rings in place, crack eggs over the top and continue to cook on a low heat until eggs are cooked to your liking, you can put a lid over the top of pan if you prefer a firmer yolk)

Homemade Louisiana remoulade yoghurt dressing (1 syn)
- (the Louisiana dressing was ¼ cup of Greek yoghurt, clove of garlic crushed, salt and black pepper, pinch of onion powder, pinch of paprika and pinch of chilli powder, then 1 tsp of olive oil – so 1 syn for ½ the recipe)

Chicken breast stuffed with broccoli, onion, celery and squash

Grilled Paprika Chicken Breast
- (chicken breast was flattened down with a rolling pin and was sprayed with olive oil spray and coated with smoked paprika, salt and black pepper and then pan fried)
Mixed Greens, red onion and grapes
Homemade ranch yoghurt dressing (1 syn)
- (the ranch dressing was ½ cup of Greek yoghurt, clove of garlic crushed, salt and black pepper, 1 tablespoon of maple syrup, pinch of onion powder, some dill and parsley,- 1 syn for half of the dressing, which is quite a lot, so a ¼ would be 0.5 syns)
Dinner
Sloppy Joe Mixture

Sauteed Turnip Greens (½ HEb)
- (saute 2 cloves of garlic in 1.5 teaspoons of extra virgin olive oil, add the turnip greens – I used a large bag of chopped turnip greens. Toss to coat, add 1-2 tablespoons of coconut aminos (or soy sauce) and season with salt and pepper. Add lid and cook on a low heat for about 2-3 mins and they are done.)

Pear Salad with a homemade dressing and a little parmesan (2 syns) (parmesan from a HEa allowance)
- (ripe pear sliced and mixed with some mixed greens, for the dressing, whisk 2 teaspoons of honey (2 syns), 1 tablespoon of balsamic vinegar and 1 tsp of olive oil (2 syns) and a little juice from a fresh lemon – which is enough dressing for 2 people) I also grated over a little parmesan from my healthy extra A choice
Dinner
Ginger and Garlic Hake Fillet
- (Hake fillet pan friend, seasoned with salt and black pepper, removed from pan and then add two tablespoons of coconut aminos or soy sauce, 1 crushed clove of garlic and a little fresh ginger and heat for a few minutes, pour over the hake fillet)
Roasted sweet potato and spiralled zucchini mixed with turnip greens

- some mashed steam squash, mixed with a tin of tuna, drained and some sauteed onion, plus 1 egg yolk, roughly mix ingredients to combine and form into patties, bake on a parchment lined baking tray until golden)

- (cooked chicken, mixed with some crispy salad leaves, orange slices and cheddar)
