An all time favourite - Tuna and Sweetcorn Mayo Salad. Perfect with a baked potatoes or some salad.

Tuna and Sweetcorn Mayo is one of those childhood favourites for me, with either a yummy baked potato or in white crusty breads (the later of course is a memory of the past, as I rarely have white bread, unless of course, I am having a treat).
I was determined to create a tasty low fat version of Tuna and Sweetcorn Mayo, which can be hard to achieve when you are not using lots of that yummy creamy regular mayonnaise.

But with a few swaps and additions like some chopped pickles (trust me they add a great flavour to this), it really does taste just as good. It made a perfect lunch with my baked potato and salad.
I have a great cheat version of doing my baked potatoes too, I half cook in the microwave, spray the skin with a little spray oil and rub in some sea salt and then finish off in the oven, it saves on lots of time, but you still get that amazing crispy skin, which is a must with a baked potato.
Don't fancy a regular potato, try serving this with a baked sweet potato. Sweet potatoes don't take as long to cook. You can part cook in the microwave first too, but I recommend reducing the time depending on the size of the sweet potato you are using.

If you have a few spare, you can top with a little butter, but because of how yummy the skin is on these baked potatoes using my method, it was yummy without.
This would be perfect for taking to work for lunch too. Add the tuna and sweetcorn mayo to a tub, and you can reheat the baked potato in the microwave, if you cook it the night before. If you don't have microwave facilities at work, just take with some mixed salad ingredients of choice - like baby leaves, tomatoes, cucumber, red onion and beetroot etc.

Yes, it sure does include the potatoes, the nutritional information is always includes everything that is listed in the ingredients list, so if it isn't in the ingredients list, it won't be included. Hope that helps.
