Watermelon and Feta Salad

Ingredients
- 80g of Feta Cheese
- 400g of cubed fresh watermelon
- 2 big handfuls of mixed baby greens
- 3 baby cucumbers, chopped
- 1 small red onion, halved and thinly slice
- salt and black pepper
- 2 tablespoons of fresh lemon juice
- 2 teaspoons of olive oil
- 2 teaspoons of honey
- salt and black pepper
- handful of fresh mint, roughly chopped
Instructions
- Add the baby leaves to a large bowl
- Add the feta, watermelon, cucumber and slices of red onion on top of the baby leaves and scatter with the crumbled feta
- To a bowl add the juice of 1 lemon, olive oil, honey and a good pinch of salt and black pepper and whisk well to combine.
- Drizzle the dressing over the salt and sprinkle with the fresh mint.
- Toss all together before serving.
