Delicious Tangy Spicy Chicken stuffed with Feta Cheese and Salsa for an easy meal packed with flavour.

Stuffed Chicken Breast Recipe
Whenever chicken breasts are on the menu for dinner, I love to add a filling to help keep the chicken breasts tender. Feta and Salsa go perfectly together too. The saltiness of the feta cheese against the tangy feta is just delicious.
Super quick to make, so perfect for a weekday meal when you get home from work. It really is just a case of seasoning the chicken, making a pocket, in the chicken breast, stuffing with the feta and salsa and baking in the oven. All done in less than 30 mins.

Best Salsa for Stuffed Chicken
I like to use a no sugar salsa for the stuffed chicken, it's much lower in calories and sugar so a healthier option for this recipe.
If making this Spicy Chicken stuffed with Feta Cheese and Salsa just for adults, you can up the heat even more by using a hot salsa. I tend to stick to mild or medium otherwise my kids won't eat it. I do like to choose chunky varieties though, just gives more texture to the filling.
You can totally make your own salsa if you have your own favourite recipe.
How to make a pocket for filling in a Chicken Breast
Wondering how you make a pocket in a chicken breast?
It's really easy once you get the hang of it - a sharp knife is a must, place the chicken breast on a board and hold it firmly down with one hand so that it doesn't move about. Using your sharp knife make the pocket in the thickest part of the chicken breast.
Once you have the start of the pocket you can open it up more with your hands, this ensures you don't make a pocket that goes right through and results in your filling all spilling out. You want the pocket to be about ¾ of the way through.
You can secure the filling the pocket with some small wooden skewers of picks, but I never both with that.

Sides for Stuffed Chicken Breast
Wondering what sides to serve with this Spicy Chicken stuffed with Feta Cheese and Salsa? I went for a simple side of roasted butternut squash mixed with some baby leaves. To roast the butternut squash. I just add some seasoning, paprika, salt and black pepper is my favourite. Spray with some olive oil spray and roasted in the oven at 200c, fan 180c or 400f (gas mark 6) for about 30-40 minutes until softened (timing will depending on the size of your cubes), then once ready toss with the baby leaves. Simple but delicious.
So many other sides will go well with this recipe. A few suggestions are:
- Garlic and Herb Roast Potatoes
- Sour Cream and Spring Onion Cauliflower Mash
- Red Pepper and Cilantro Rice
- Mashed Sweet Potato
- Crushed Roast Potatoes
- Lime Cilantro Rice
- Chickpea Pilaf

I made this recipe a few nights ago but instead of using regular Mexican salsa, I made what I guess could be called Greek "salsa". I used red onions, roasted red peppers, balsamic vinegar, olive oil, tomatoes, garlic and olives. I mixed a quarter of the feta with some herbs and it turned out magical! Thanks for the inspiration!

I could only fit in 1 tablespoon of salsa and half the feta per portion though so less HA's and less sins!!
