Roasted Cauliflower Cheese Lasagne - sumptuous layers of creamy, rich cheese and the nutty, caramelised cauliflower come together in a harmonious blend that feels like a match made in heaven.
Ingredients
- 1 large cauliflower
- ½ teaspoon of garlic powder
- salt and black pepper
- low calorie olive oil spray
For the Alfredo Sauce:
- 1 cup of 2% milk
- 2 cups of vegetable stock
- 80g of light cream cheese
- 2 tablespoons of cornstarch (cornflour)
- 1 teaspoon of dijon mustard
- ½ teaspoon of onion powder
- ½ teaspoon of garlic powder
- ½ teaspoon of Italian seasoning
- 30g (1oz) of parmesan, finely grated
For the lasagne:
- 6 oven ready pasta sheets (may need more or less depending on the shape of dish you use) - can use gluten free varieties
- 60g (2oz) of mature cheddar cheese
- 50g (1.7oz) of mozzarella
- low calorie olive oil spray
- Freshly Chopped Italian Parsley
Instructions
- Preheat oven to 180c fan, 200c, 400f or gas mark 6
- Slice the cauliflower into thin steaks and then break the steaks into smaller pieces. Spread them onto a baking sheet lined with parchment paper. Season with garlic powder, salt, and black pepper, then generously spray with olive oil spray. Roast in the oven for about 25 minutes until lightly golden.
- Remove from oven and set aside (leave oven on while you make up the lasagne)
- In a saucepan, combine milk, stock, cream cheese, onion powder, garlic powder, Italian seasoning, mustard, cornstarch, salt, and black pepper. Stir constantly, bringing it to a boil, then reduce heat and simmer until slightly thickened. Stir in the Parmesan until melted, then remove from heat.
- Layer 2 lasagne sheets at the bottom of the dish (The number of sheets may vary depending on the size of your dish) Spread half of the roasted cauliflower mixture evenly over the lasagne sheets. Spoon one-third of the sauce over the cauliflower layer. Place 2 more lasagne sheets over the sauce, then add the remaining half of the roasted cauliflower mixture on top. Spoon another one-third of the sauce over the second cauliflower layer. Add the final 2 lasagne sheets over the sauce layer. Pour the remaining sauce over the top layer of lasagne sheets,
- Add the grated cheddar and mozzarella cheese to the top
- Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and continue baking for an additional 15 minutes or until the top is golden and browned.
- Garnish with fresh chopped parsley before serving.

I use oven ready lasagne sheets, they are not fresh pasta, but they don't need pre-cooking, if you don't use oven ready, then yes you will need to pre cook. 🙂
