I don't know about you, but I love lasagne. Lasagne is such a great dish for the family. Serve it in the middle of the table and you can all dig in with some additional sides to make it an amazing meal.

Mexican Lasagne
This Spicy Mexican Chicken Lasagne is one of my favourites. I am not a huge fan of ground (mince) chicken or turkey on its own, but in this lasagne, the combination of the layers of pasta with a spicy Mexican sauce and melted cheesy goodness on top will amaze anyone's taste buds.
Adjusting the Spice Level in Recipe
It does have a spicy kick to it from the cayenne, but not too spicy that it is too hot to handle, my kids devour their serving and you gotta love a recipe that you know the whole family can enjoy.
You can totally adjust the spice level too, omit the cayenne if you can't handle any heat or add in bit extra if you like it super spicy. Hell, you could even add some sliced Jalapeno's to the top along with the sliced tomatoes if not level of hotness is too hot for you.
Batch Cooking Lasagne
This Spicy Mexican Chicken Lasagne is also a great one for batch cooking, either make up the entire lasagne in a single dish to freeze layer or use some handy food prep containers and freeze in little single portions.
Work a busy schedule and don't have time to get this all ready on the night? Prep it all the night before and then as soon as you get in from work, you can just bung it in the oven to bake and it will be all ready come dinner time.
Making a lower carb version of Lasagne
Want to make this lower carb? Replace the pasta sheets for something like butternut squash or zucchini slices.
Meat Variations
Don't like ground chicken or turkey? you could also try this with ground beef or even some shredded cooked chicken breast or thigh. Either would be equally yummy. If you are vegetarian, this would also be yummy made with Quorn or meat replacement, or even some mixed beans and corn.

Vegetables Sides for Lasagne
I like to just serve this with a simple mixed salad - shredded crisp lettuce, tomatoes, julienne carrots, shredded red cabbage and a little corn (the latter of course not a speed food), but combined with all the other stuff it is perfect.
Don't fancy salad? This is great with some steamed or sauteed greens of your choice too, like tender stem broccoli.

Spicy Mexican Chicken Lasagne
Spicy Mexican Chicken Lasagne - all the delicious flavours of Mexican food in this family-friendly lasagne recipe.
Ingredients
- 600g (21oz) of extra lean ground chicken (mince) or turkey
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 1 green pepper, finely chopped
- 2 cloves of garlic, crushed
- 8 tablespoons of quark (or can use light cream cheese or soured cream if you prefer)
- salt and pepper to season
- cooking oil spray
For the sauce
- 2 cups (480ml) of passata
- 3 tablespoons of tomato puree (paste
- 2 teaspoons of mild chilli powder (do not use Indian chilli powder)
- 2 teaspoons of cumin
- 2 teaspoons of sweet paprika
- 1 teaspoon of onion powder
- ½ teaspoon garlic powder
- 1 tablespoon of white wine vinegar
- ¼ teaspoon of cayenne pepper
- ¾ tablespoons of brown granulated sweetener (I use erythritol)
For the top:
- 120g (4oz) of cheddar
- 100g (5.5 oz) of mozzarella
- 8 oven-ready lasagne sheets (may need slightly more or less depending on dish dimensions)
- 2 vine tomatoes, sliced thinly
- 2 spring onions, sliced thinly or chopped coriander (cilantro)
Instructions
- Preheat oven to 180c, 160c fan or 350f (or gas mark 4)
- Add the passata, tomato puree, vinegar, spices and brown granulated sweetener to a small saucepan, bring to the boil and lower heat to a bubbling simmer, until sauce reduces down and thickens slightly.
- Spray a frying pan with cooking oil spray and add the ground chicken, peppers, onion and garlic.
- Cook until ground chicken is browned, remove from heat and stir in the quark until all combined.
- Add half the chicken mixture to an large rectangle oven proof dish and spread out evenly
- Add 4 lasagne sheets over the top and half the spicy tomato sauce.
- Top with the other half of the chicken mixture, another 4 lasagne sheets and then pour the remaining spicy sauce over the top.
- Sprinkle with the grated mozzarella and cheddar and top with 6 slices of tomato.
- Season the top with some salt and black pepper.
- Cover with foil and bake in the oven for approx 20 mins, then remove the foil and return to the oven for another 20mins until cheese on top is browned. (you can place under the broil/grill for an additional 5 mins if you really want to brown up the top)
- Sprinkle with some chopped spring onions or coriander and serve with a sides of your choice

Really tasty yet easy meal, it was a big hit. We couldn't get hold of chicken mince so used turkey instead, and served with fries and a salad which was really filling. We will be making this time and again!

Thanks for the recipe... made this and the family loved it! 8 - 80 were all very happy! Was a bit watery tho, no probs as I drained it off before plating up, but just wondering where I went wrong?!

Make sure you simmer the sauce till it reduces down and thickens, before adding it to the dish.

Hey Rona, fat-free soured cream will work (does have a small syn value), I've also used fat-free plain Greek yoghurt before when I've not had either of those to hand and it's been okay.

Am new to slimming world but thank you for your website - I can only imagine how much time and effort it takes. Made this tonight and what a hit with my family. Just so delicious (halved chilli powder as not sure how hot it was going to be). So easy, tasty and delicious. Family were suggesting making it with salmon or roasted vegetables as so want it again.
