- Chicken Drumsticks: These succulent chicken drumsticks serve as the main protein in our dish, offering a juicy and flavourful base for the glaze to coat.
- Garlic and Onion Powder: Adding depth and aromatic notes to the dish, garlic and onion powder infuse the chicken with savoury flavours, enhancing its overall taste profile.
- Salt and Pepper: Essential seasonings that help to balance and enhance the flavours of the dish, salt and pepper contribute to a well-rounded taste experience, ensuring each bite is perfectly seasoned.
- Maple Syrup: The star ingredient of our recipe, maple syrup lends its natural sweetness and rich flavour to the glaze, creating a deliciously caramelized coating on the chicken.
- Soy Sauce: Providing depth and complexity to the glaze, soy sauce adds a savoury umami flavour that complements the sweetness of the maple syrup, resulting in a harmonious blend of tastes.
- Passata: This smooth and vibrant tomato purée adds a subtle tanginess and depth to the glaze, enhancing its overall complexity and contributing to a well-rounded flavour profile.
- Rice Vinegar: Offering a gentle acidity and brightness to the dish, rice vinegar helps to balance the sweetness of the maple syrup and adds a refreshing contrast to the rich flavours of the glaze.
- Low Calorie Spray: Used for cooking and coating the chicken, low-calorie spray ensures that the chicken drumsticks are cooked evenly and with minimal added fat, resulting in a healthier yet still delicious dish.

Easy Method to Remove Chicken Skin
Removing the skin from chicken drumsticks is a simple process that can be easily accomplished using kitchen paper or a clean kitchen towel. Follow these easy steps:
- Prepare Your Workspace: Lay out a clean kitchen towel or several sheets of kitchen paper on a flat surface. Ensure the surface is clean and dry to maintain hygiene.
- Hold the Drumstick Securely: Take one chicken drumstick in your hand and hold it firmly but gently.
- Grip the Skin: Using your fingers, grip the loose end of the skin firmly. It's usually easiest to start from the top of the drumstick where the skin is looser.
- Peel Back the Skin: Slowly and steadily, begin to peel back the skin from the top of the drumstick, working your way down towards the bottom. Take care to peel it off in one piece if possible, as this makes the process easier and less messy.
- Use the Kitchen Paper/Towel: If the skin is particularly slippery or difficult to grip, use a piece of kitchen paper or towel to help you get a better grip. This can also help to absorb any excess moisture or grease from the skin, making it easier to remove.
- Repeat for Each Drumstick: Continue this process for each chicken drumstick until all the skin has been removed.
- Discard the Skin: Once the skin has been removed from all the drumsticks, discard it in the trash or compost bin.
By following these simple steps, you can easily remove the skin from chicken drumsticks using kitchen paper or a clean kitchen towel, leaving you with perfectly prepared chicken for your recipe.
Variations and Substitutes
Variations and substitutes offer flexibility and creativity in cooking, allowing you to adapt a recipe to suit your taste preferences or accommodate dietary restrictions. Here are some suggestions for variations and substitutes for the ingredients in this recipe:
- Chicken Drumsticks: Instead of chicken drumsticks, you can use boneless skinless thighs or chicken breast pieces. Adjust cooking times accordingly based on the size and thickness of the chicken pieces.
- Maple Syrup: If you don't have maple syrup on hand, you can substitute it with honey. Each alternative will impart a slightly different flavour profile, so adjust the quantity to taste.
- Soy Sauce: Tamari or coconut aminous can be used as substitutes for soy sauce, especially if you're looking for a gluten-free option.
- Fresh Ingredients: Fresh minced garlic and finely chopped onion can be used as substitutes for garlic and onion powder if you want to add some more texture to the sauce.
- Mix up the seasoning: Feel free to mix up the seasoning and get creative! Experiment with different seasonings and spices to customize the flavour of the dish to your liking. Consider adding smoked paprika, chili powder, or dried herbs like thyme and rosemary to add depth and complexity to your creation.
- Tomato Variations: If you don't have passata, you can use canned diced tomatoes or tomato sauce as substitutes.
- Rice Vinegar: Substitute rice vinegar with apple cider vinegar, white wine vinegar, or lemon juice for a similar level of acidity. Adjust the quantity based on your preference for tartness.
By exploring these variations and substitutes, you can tailor the recipe to suit your dietary needs and culinary preferences while still enjoying the delicious flavours of maple-glazed chicken.
