Ingredients
- 4 large waxy potatoes (approx 200g each) - yukon gold, anya variates or similar
- 1 cloves of garlic, minced
- 1 ½ tablespoon of salted butter
- salt and black pepper
- handful of fresh parsley, finely chopped
- little juice and zest of a fresh lemon (plus wedges to serve)
- low calorie spray
Instructions
- Pierce potatoes with a knife and microwave on high for 5 minutes (adjust time if needed based on potato size). Potatoes should be slightly tender after microwaving.
- Allow potatoes to cool, then remove the skins and slice into approximately 1 ½ inch cubes.
- Heat a large frying pan over medium-high heat and spray with low-calorie spray.
- Add potatoes to the pan and let them golden on one side. Carefully move them around in the pan to ensure even goldeness all over, adding more spray as needed.
- Add garlic, butter, and a little lemon zest and juice to the potatoes. Toss until garlic is fragrant and butter is melted around the potatoes.
- Mix in parsley and toss to coat. Season well with salt and black pepper.
- Serve with lemon wedges and enjoy!
