Easy Homemade Pickled Onions
I love pickled onions, but there is nothing quite like a jar of these easy homemade pickled onions in your fridge. So easy to make and so much more flavour too. Once you make these, you will regularly have a jar stocked in your fridge and will rarely resort to store bought again.
The pickling liquid with garlic and herbs just adds so much delicious flavour and will add are great adding to so many dishes or like me you can even eat them straight from the jar.
Can I use any onions for Pickled Onions?
I use red onions for these homemade pickled onions, they just add a much more pretty pop of colour that looks really beautiful on salads etc, you won't get that same vibrant pop of colour with other onions.
However if you want to use a different variety of onion there is no reason why you can't, you can even use little small pearl onions if you like.
Can I use different herbs?
Don't like one of the herbs I use? feel free to swap for something else, you can really play around with this recipe for different flavours, add a pinch of chilli flakes for heat, different herbs for flavour and even a mixture of different vinegars if you like.
Whatever you add to the pickling liquid with add flavour to your pickled onions. Hey you can even add other things in with the onions if you like. Such as radish, cucumber, carrots, cabbage and if you really like garlic add in a few more cloves if you like.
Can I swap the sweetener for sugar?
I use real sugar in this recipe, I have tried with granulated sweetener and I just didn't like the overall amount. It's not a huge amount of sugar for the amount of pickled onions this recipe makes. Plus you are not consuming the pickling juice (well at least I hope not lol) - so the majority of the sugar is not being consumed anyway.
However if you want to make the swap for personal preference, then please do. Also if you don't like a sweet pickled flavour, then you can omit the sugar/sweetener altogether, but I find it balances out the acidity. It can be a bit too acidic without.
What can I use pickled onions in?
The short answer? is absolutely anything, add them to salads, sandwiches, as a side to any protein or main course, on tacos whatever you like really.
These will go well with so many things, which is why they are a great item to have in the fridge. They will add a pop of colour and flavour to so many dishes.

Homemade Pickled Red Onions
Pickled Red Onions - an easy simple recipe for homemade pickled red onion, once you try these you will never buy store bought again. Perfect condiment to a variety of dishes.
Ingredients
- 250g (90z) of red onion, sliced thinly
- 120ml (½ cup) of white vinegar
- 120ml (½ cup) of red wine vinegar
- 240ml (1 cup) of water
- 3 tablespoons of white sugar (or use any sweetener of your choice)
- 2 cloves of garlic, sliced thinly
- ½ teaspoon of dried oregano
- 1 teaspoon of dried dill
- 2 teaspoons of fine sea salt
Instructions
- Remove peel from onions, and using a sharp knife or mandolin slice thinly. Set aside.
- Heat the vinegar and water, with the sugar and salt in a small saucepan until the sugar is fully dissolved and then set aside to cool.
- Add the onions to a large container or jar (you can use two if you don't have a large one big enough).
- Once the pickling liquid has cooled, add in the sliced garlic, dried dill and oregano and stir until all combined.
- Pour this oven the onions, ensuring the onions are all pushed down and submerged in the pickling juice.
- Keep in a. airtight container/jar in fridge. I find these are best left for the flavour to develop overnight before enjoying for the first time.
