Corn and Tomato Salsa

Ingredients
- 450g cherry tomatoes, finely chopped
- 1 small onion, finely chopped
- 1 garlic clove, crushed
- 1 jalapeno,deseeded and finely chopped
- 60g of sweetcorn (tinned or frozen/defrosted)
- juice of half a lime
- handful of fresh coriander, chopped
- little sea salt
Method
Mix all ingredients together in a bowl
Cover with cling film and set aside for a few hours at room temperature to allow flavours to all mix.
This makes a great side to many dishes.
