I love that I can throw some ingredients on a tray, bung it in the oven and not have piles of different pans and dishes to clean up afterwards.

One challenge for you is trying to see if you can get a little bit of everything on your fork all at once. It's heavenly.
Sweet tangy coated chickpeas with onions and peppers, against the soft yolk of perfectly cooked eggs, kale and crispy crunchy whole wheat toast. Yum!!

What about ⅓ speed foods in this Chickpea, Egg and Kale Tray Bake?
Don't worry, there are plenty of healthy speed foods in this recipe - kale, peppers onion. But feel free to add any other veg to the tray bake that you think might compliment the dish.
Mushrooms or courgette (zucchini) would also be great additions.
I just went with what vegetables I had at the time and what I thought would compliment all the flavours.
