Ingredients
- 2 Salmon Fillets (approx 150g/5.5oz per fillet)
- 2 large zucchini (courgette), sliced into batons
- 2 large carrots, sliced into batons
- 2 cloves of garlic, crushed
- 1 tablespoons of butter, softened
- juice and zest of half a lemon
- handful of fresh parsley, chopped finely
- low calorie spray oil
- salt and black pepper
- 1 lemon sliced
Instructions
- Preheat your oven to 180°C (fan), 200°C, 400°F, or gas mark 6.
- In a small bowl, mix together the softened butter, garlic, lemon zest, and chopped parsley until well combined.
- Place the salmon fillets on one half of a large non-stick baking sheet. Squeeze a little fresh lemon juice over each salmon fillet.
- Spoon the butter mixture onto the salmon fillets, then garnish each fillet with a couple of lemon slices.
- Arrange the carrot and zucchini batons on the other half of the baking sheet and spray them with cooking oil spray.
- Season both the vegetables and salmon with salt and black pepper.
- Bake in the preheated oven for approximately 15-20 minutes, or until the salmon is moist and succulent.
- Serve as is or with your choice of additional sides.

Made this for the first time tonight. I normally make a risotto with salmon on top when we eat salmon. However we had been out for lunch and eaten wedges so less carbs was good for us tonight.
