Mustard Salmon - fresh oven baked salmon fillets with a delicious whole grain dijon mustard and mayonnaise topping.

Baked Dijon Mustard Mayo Salmon
This salmon recipe is so simple to make, a small amount of ingredients and ready in less than 30 mins, if you don't try it, you are missing out.
I love salmon, but it can be hard to source wild caught which I prefer, most tends to be farm raised and expensive too. But recently when at Costco, they had some reasonably priced Wild Sockeye Salmon Fillets, and with salmon being one of my favourite fishes, it of course ended up in my cart.
Can I use Frozen Salmon?
Most salmon here is previously frozen, generally because I don't live anywhere near the sea. So frozen salmon should be fine to use in this recipe. Just make sure you pick good quality frozen salmon.
When using frozen salmon you can generally cook from frozen or defrost overnight in the fridge. I prefer to defrost overnight in the fridge.

Can I use just regular mustard?
While regular mustard will work in this recipe, you won't get the same appearance and the pop of seeds in whole grain mustard really adds a much nicer flavour.
Some regular mustards may add too strong a flavour to, so I recommend sourcing whole grain if you don't have any. Maille is a good brand. But I also use Trader Joes brand.
Finishing Salmon under the broil or Grill
As well as baking the salmon in the oven. I also like to finish it off under the broil (grill) for a minute or so, it just helps give a nice golden colour to the mayo and mustard topping.
It's of course totally optional, you can enjoy it just as it is from the oven, as it won't really make any difference to flavour. It just gives a nicer appearance.

Sides for Mustard Salmon
This Mustard salmon is great with a variety of different sides. You can simple just go for some vegetables if you are trying to stick to a low calories meal.
Sauteed Spinach and Sauted Spiralized Vegetables is one of my favourite choices.
But if you want some more traditional sides. Then I love it with either
- Garlic and Herb Roasted Potatoes
- Crispy Golden Potatoes
- Crushed Roast Potatoes
- Roasted Paprika Butternut Squash
and then for some vegetables I love roasted zucchini (courgette). I just spray with olive oil cooking oil spray, season with salt and black pepper and roast at 425f for about 15 until softened and lightly caramelized. You can cook for less if you prefer it with more of a bite.

Could you use 1tsp of whole grain mustard and 1tsp of Dijon mustard as whole grain Dijon seems to be a problem to purchase in the UK

yes that is fine, or just use Maille whole grain mustard

Just made this and with roasted broccoli and cauliflower. I put a touch of honey in the mayo and mustard. Have to say it was delicious. Definitely making it again.
