Sweet Potato Tuna Patties - delicious oven baked patties packed with tuna, sweet potato and vegetables for an easy meal, lunch or snack. They are golden on the outside, soft in the middle and perfect served hot or cold with salad, dip or salsa.

Patties are always one of my favourite things to make because they are so versatile and easy to throw together with just a few simple ingredients. The combination of sweet potato and tuna works so well together, especially with the added flavour from red onion, zucchini and bell pepper. They are great for meal prep too and perfect for lunch boxes, picnics or quick lunches during the week.

Ingredients Notes
To make this recipe you will need the following ingredients:
- Sweet Potatoes - Add natural sweetness and help bind the patties together while keeping them soft in the middle.
- Red Pepper and Red Onion - Add colour, texture and extra flavour to the patties.
- Eggs - Help bind everything together so the patties hold their shape while baking.
- Salt and Black Pepper - Important for seasoning and bringing out all the flavours.
- Tuna - Adds plenty of protein and works perfectly with the sweetness of the potato. Make sure to drain the tuna well before mixing.
- Zucchini - Adds extra moisture and vegetables to the patties. Squeezing out the excess liquid helps prevent the mixture becoming too wet.
- Fresh Parsley - Adds freshness and a lovely flavour throughout the patties.
- Olive Oil Spray - Helps the patties become golden and slightly crisp on the outside while baking.

Variations and Substitutes
These tuna patties are really easy to adapt depending on what you have on hand or the flavours you enjoy most.
- White potatoes can be used instead of sweet potato, especially a floury variety like russet or Maris Piper.
- Canned salmon works really well in place of tuna.
- Add chilli flakes or finely chopped fresh chilli for a little heat.
- Sweetcorn adds extra sweetness and texture to the patties.
- Spring onions can be used instead of red onion for a milder flavour.
- Fresh coriander or dill work really well instead of parsley.
- Add finely diced sauteed carrot for even more vegetables.
- Add in some grated cheese like cheddar or parmesan for a cheesy tuna melt flavour.
- A little garlic powder, smoked paprika or Cajun seasoning adds extra flavour.

Side Suggestions
These patties are really versatile and work well for lunch, dinner or even packed into lunch boxes cold the next day. They are delicious served with a simple side salad, coleslaw or some roasted vegetables for an easy meal. Rice, wedges or sweet potato fries also work really well alongside them if you want something a little more filling.
For dips and sauces, I love serving them with a homemade yoghurt dip like this Tzatziki, Honey Sriracha Dip or Ranch, salsa, sweet chilli sauce or a little mayo on the side. They are also great tucked into wraps or burger buns with salad for an easy lunch option.
Storing, Freezing and Reheating
Storing
Allow the patties to cool completely before transferring to an airtight container and storing in the fridge for up to 3 days. They are delicious enjoyed both hot and cold.
Freezing
These patties freeze really well. Once cooled, place them on a tray to freeze individually first, then transfer to a freezer safe container or bag and freeze for up to 3 months. You can also place small squares of parchment paper between the patties so they separate easily straight from the freezer.
Reheating
Reheat in the oven at 180°C fan, 200°C, 400°F or gas mark 6 for approximately 10-15 minutes until heated through and lightly crisp again on the outside. For the air fryer, reheat at 180°C (350°F) for 5-8 minutes until hot and crisp.. They can also be reheated in the microwave, although they will be softer reheating this way.

I used two tins of tuna, no zucchini (none in the cupboard) and coriander ... the mixture was runny because of the two tins (seen that I only need one from now on) but, I made the patties and they are a complete lifesaver...so tasty. If I'm out and about I just put some speedy green salad in a tupperware, a bit of thai bean salad sprayed with lemon juice and salt and pepper, pop in a couple of these and I'm good to go. Ive never left a food review before ... but this is well deserved,

Hi Shevy, I made these the other day and they were lovely, going to make them again for our taster in the morning. Do you think the mixture would be ok to make up today and bake tomorrow, I would like these to be fresh out of the oven for the taster but don't have time in the morning to make from scratch so thought I could prepare them today. Also, how would you do a low syn dip, fromage frais and mayo or what could you suggest?

Made this recipe twice for my toddlers and wow it's amazing!!! One of my Lil guys absolutely hates eating fish and he had no problem eating these, on the contrary, he kept asking for more! The first time I had no zucchini , I used butternut squash as a sub and it was great.
The second time around, I made the recipe with steamed Baramundi and also added corn, had no zuchinni yet again and also no butternut, I decided to steam a little potato and include corn into it and it came out divine! For this second one, I incorporated garlic and onion powder, basil, coriander powder and it just all came together very nicely. Thanks again!
