Lightly golden pieces of sweet potato, with speedy spinach and eggs, cheese and seasoning, you can't get much simpler than that.

This Sweet Potato and Spinach Frittata makes a great breakfast because it has a good source of protein and healthy carbs from the sweet potato, so it will keep you high satiated until your next meal.

Just simple easy ingredients for this delicious frittata:

Cubed Peeled Sweet Potato
Onion
Seasonings: Sweet Paprika, Garlic Powder, Red Pepper flakes, Salt and Black Pepper
Spinach
Eggs
Cheddar

I like to get everything all prepped before I start a recipe so it's all ready to go.

Cooking a Frittata

To cook this frittata I like to use a small 8 inch cast iron pan. The reason for this is you can start it on the stove for the base ingredients and then transfer it to the oven without any need for using another pan or dish. I am all for less cleaning up afterwards.

I like this Lodge 8 inch cast iron skillet which you can get on Amazon - but of course any oven friendly pan will do or if you don't have an oven friendly pan, start it in a pan and transfer to an oven dish.

Dairy Free Frittata

You could omit the cheese from this if you want to reduce the calories a bit more and make it dairy free or use a dairy free cheese instead or even some nutritional yeast for that cheesy flavour.

Sweet Potato Substitute

If you want to make this with more vegetables, then replace the sweet potato with butternut squash, which will also reduce the calories slightly too, it's a great substitute for sweet potato and has a similar flavour.

Sides for Sweet Potato and Spinach Frittata

If I am enjoying a slice of this for breakfast I usually will have a square of it just as it is or with a small bowl of fresh berries on the side with my cup of coffee.

For lunch if I am having a slice I will go for a mixed salad with some baby leaves and other salad ingredients. Some of the Homemade Light Ranch Yoghurt Dressing on the side is a must also.

Ingredients

low calorie spray
1 small onion, finely diced
250g (9oz) of sweet potato raw, peeled and cubed small
1 teaspoon of sweet paprika
½ teaspoon of garlic powder
pinch of red pepper flakes (optional)
Salt and Pepper to season
2 handfuls of fresh spinach, chopped
7 large eggs
70g (2.4oz) cheddar, grated

Instructions

Preheat oven to 160c fan, 180c or 350f (gas mark 4)
In a bowl, whisk the eggs
Spray a frying pan with some low calorie spray and add the onion and fry for a couple of minutes to soften and lightly brown
Spray with more low calorie spray and Add the sweet potato and fry for about 8-10 minutes until tender.
Season with the paprika, garlic powder, pinch of red pepper flakes, and a pinch of salt and black pepper and stir until all coated. Add in a couple of tablespoons of water just to deglaze anything stuck to bottom of pan and ensure liquid is cooked off.
Reduce the heat, add the spinach and cook until spinach is slightly wilted
Pour egg mixture over top and then sprinkle with the grated cheese.
Bake for approx 25-30 mins until frittata is lightly golden on top and set
Serve and enjoy, I like to slice into 8 slices (2 per person), but you can also just slice into 4 if you prefer.
