You know how it is, you spend most the morning running around like crazy, making lunches, getting the kids sorted for school, making sure they have everything they need, and lastly some breakfast. When you are rushed for time like that, the last thing you want is to spend too long on making a breakfast.
On Slimming which are spoiled for choice with awesome breakfasts using all those free foods at our disposal, but sometimes you just don't have time to make up a full breakfast.
I personally hate having something quick and unfulfilling like a bowl cereal, it never leaves me well satiated, most are loaded with too much sugar and have no protein. So, I began to think, how can I make a delicious fulfilling breakfast in less than 5 mins? Because we all need a quick breakfast occasionally, right? Some much more than others.
Then there also those of you who have to be up at the crack of dawn too and don't even get a chance to eat breakfast until you get into a work, so I knew this had to be something that was portable and could be made up in a microwave, as most working places have one of those nowadays.
So that then gave me the idea of this Breakfast in a Mug. All that had to come next was the ingredients. I love sweet potato in my omelette or frittata, so the choice was pretty simple. Sausage, onion, sweet potato and eggs. Simple healthy ingredients that come together easily for a delicious healthy and filling breakfast.
Breakfast is the most important meal of the day, what you eat at breakfast will set your up for the rest of the day, start of badly and the chances are the rest of the day will follow suit.
This breakfast in a mug takes less than 5 mins to cook. It has a good source of protein and is both gluten and dairy free, plus suitable for those who are paleo or doing Whole30.
When you fill your mug, you want it at least ½ of the way full, that way when you add the whisked eggs (2 eggs should be plenty) it will rise to a decent height. I use a big mug too, not a small teeny one.
I think this Breakfast in a Mug may be my new favourite breakfast when rushed for time. Which can only meal lots more other versions coming soon.

Quick Breakfast in a Mug
This recipe is gluten free, dairy free, vegetarian, paleo, Whole30, Slimming and Weight Watchers friendly
Green/Vegetarian - use a vegetarian sausage
WW Smart Points - 10 (includes avocado)
Ingredients
- 2 eggs, beaten
- 1 uncooked sausage
- 60g of cubed raw sweet potato (or butternut squash)
- 20g of onion, diced
- pinch of paprika
- salt and black pepper
- spray oil
- chopped tomatoes
- 28g of avocado
Instructions
Remove the skin from the sausage, and break up the sausage into small pieces
Add the sweet potato, onion, and sausage to a mug
Add the paprika and a little salt and pepper
Spray with spray oil and mix to coat.
Place the mug in the microwave with a plate over the top and microwave on high for 2 mins
Remove and stir
Add in the whisked eggs
Place back in the microwave (not plate this time)
Cook for 1 min high, and then check if egg is done, add 30 secs in two intervals if needed.
Topped with chopped tomato and avocado if using
Season with salt and black pepper
