Ingredients

3 Chicken thighs (skinned and boned)
2 tbls of soy sauce
1 tbls of balsamic vinegar
1/2 tsp of ginger
2 cloves of garlic (crushed and chopped finely)
1/2 tsp of chinese five spice
1 tsp of sweetener
1/4 tsp of chilli powder
Spray Oil

For the salad:
Mixed Lettuce Leaves
Grated Carrot
Red Seedless Grapes
Red Onion (Sliced)
3 tbls of sweetcorn

Method

Put the soy sauce, balsamic vinegar, ginger, garic, sweetener, five spice and chill powder into a bowl.
Add the chicken thighs and leave to marinate for approx 1 hour.
Spray a griddle pan or george foreman with some spray oil and cook chicken until cooked through.

Serve on top of your mixed salad.

lol, it was really yummy. I adapted the chicken recipe out of a book I have to make it suitable for slimming world and was thinking hmmm what can I add to my salad and saw some lovely red seedless grapes peering at me from the fridge. So though what the heck i’ll add some of them and surprisingly it really worked. I will definately be doing this recipe again.

    Motivation is the key to any keep fit, weight loss or healthy eating programe anyone may undertake. Personally I decided to get out walking and opened http://www.lakedistrictwalks.net to help motivate me in my endevours to get fit after a few years doing nothing.
    I am no Lake District Walks guide although I do offer anyone who wishes to get out and get fit the opportunity to come join me and there is no charge for this as its simply a walk out in the countryside if you would like. Maybe this could be the start of your new keep fit programe enjoying one of Englands National Parks and great scenery.
