Makes 1 large quiche or 2 medium sized ones
1 HEa per serving on Red or Extra Easy
500g tub of Quark or Fat Free Cottage Cheese
230g of frozen broccoli (thawed)
6 thick slices of lean ham, chopped
56g of cheddar cheese (2xHEa)
56g of parmesan cheese (2xHEa)
salt and pepper for seasoning
Frylight or Pam spray
Preheat oven to 180c or 350f
Add to a large bowl the quark, eggs and cheddar cheese and using a hand blender mix until smooth.
Grease one large or two small quiche dishes with Frylight or Pam spray.
Add the broccoli and ham to the dish, pour over the quark and egg mixture and top with the parmesan.
Season with salt and pepper.
Bake in the oven until quiche mixture has set and is golden.
