Leftover Chicken Brussels Sprouts and Bean Soup - An easy healthy and satisfying meal in a bowl.

When I was adding some leftover ingredients to my dutch oven pot this week to make a delicious filling soup, I really wasn't thinking about how this would be a great for those leftovers after Christmas day.
After Christmas all that leftover turkey (instead of the chicken) and Brussel Sprouts, will be perfect for this soup, to ensure you don't waste any of those leftovers.
Combining leftovers into different meals means you won't get bored of eating the same thing too.
Brussel sprouts used to be something I hated as a child, and I don't think I am alone in feeling that way.
Many hate them, mostly because of they only way they were ever served, was over boiled until they take on a horrible bitterness that isn't pleasant.
Roasted, sauteed or even raw in a salad whoever, you can give them to me any day. I am glad to say now they are a frequent ingredient in my shopping cart when in season.

Just take a look at this Brussel Sprout Gratin, for example, that's enough to convert anyone back to Brussel Sprouts, right? If you have any either eaten them over boiled, try these Shredded Sauteed Garlic Brussel Sprouts, which are yummy.

Hi, I have recently found your blog and I love it. I tried the carrot & butterbean one first and its my favourite soup, hands down!
Just a couple of questions on this recipe though (it’s currently on the stove) I added the butternut squash in at the same time as the Brussels (doesn’t say in the recipe) & am I to drain the beans or add the whole tin into the soup?
I’m so glad I found you. Both my husband and I are loving working our way through it.
