A stew will always bring back childhood memories for me, as my mother and my grandmother would regularly have a pot of stew on the stove at least once a week. It was traditional to grab a mug of the broth on a cold winter's day and sip away to warm yourself up. That's why you will find a few different Stew Recipes on Slimming Eats.

Ingredients for Beef and Sweet Potato Stew
In the hearty stew we use the following ingredients:
- lean stewing beef
- carrots
- onion
- celery
- garlic
- sweet potato
- beef stock
- tomato paste
- balsamic vinegar
- fresh herbs: thyme, rosemary and parsley
- salt and black pepper
- cornstarch
- olive oil spray

Substitutions and Variations
For my Beef and Sweet Potato Stew, I use just lean cubed stewing beef.
But for even more amazing flavour, Oxtails are a great variation to use instead of the stewing beef. They add great flavour to the broth and the meat is so incredibly tender once the stew is cooked, it just falls off the bone.
Other cuts of beef that can be used in stews are:
- Chuck
- Bone-in short rib.
- Brisket
- Cross-cut shanks
- Silverside
Aside from beef you can also use lamb in this recipe. Like some boneless leg of lamb pieces.
If you want to make it slightly lower carb, then you can swap out the sweet potato for some butternut squash and of course regular potatoes work well in this too. However the natural sweetness you get from sweet potato adds a lovely flavour to the broth.
Cooking stew in a Pressure Cooker or Slow Cooker
If you own a pressure cooker like an Instant Pot or Ninja or even a slow cooker, this recipe is also perfect to cook in either of those. Because liquid doesn't reduce down though like it will on a stove, you may want to use less stock. For me the more broth with a stew the better so I just leave it as it is.

Beef and Sweet Potato Stew
Dig into a Healthy Bowl of this Beef and Sweet Potato Stew - a hearty filling winter warmer meal
Ingredients
- 500g (17.5oz) of lean stewing beef (trim any visible fat)
- 2 large carrots, chopped
- 1 large onion, chopped
- 3 sticks of celery, chopped
- 2 cloves of garlic, crushed
- 1 large (400g/14oz) sweet potato - or sub with butternut squash
- 4 cups (960ml) of beef stock (use 3 for slow cooker/instant pot method)
- 2 tablespoons of tomato paste
- 1 tablespoon of balsamic vinegar
- pinch of thyme
- pinch of rosemary
- salt and black pepper
- 2 tablespoons of cornstarch/cornflour (or can use tapioca starch or arrowroot powder)
- olive oil spray
- fresh chopped parsley
Instructions
STOVE TOP:
- Spray a large dutch oven or saucepan over a medium-high heat with cooking oil spray.
- Add the beef in two batches, season with salt and black pepper and cook till lightly browned.
- Set aside.
- Add onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins till softened.
- Add all other ingredients
- Bring to a boil, then reduce heat cover and simmer for approx 1.5 hours (the longer the better)
- Mix the cornstarch with a little cold water to make a paste and stir it into the stew until thickened.
- Sprinkle with some fresh parsley.
- Serve and enjoy
INSTANT POT:
- Set the instant pot to saute mode and spray the inner pot with cooking oil spray.
- Once the instant pot displays hot.
- Add the beef in two batches, season with salt and black pepper and cook till lightly browned.
- Set aside.
- Add the onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins till softened.
- Add back in the beef and all other ingredients. (apart from cornstarch)
- Add lid, set to manual high pressure for 30 minutes
- Once finished cooking allow pressure to release naturally
- Set to saute mode
- Mix the cornstarch with a little cold water to make a paste and stir it into the stew until thickened.
- Sprinkle with some fresh parsley.
- Serve and enjoy
SLOW COOKER:
- Spray a large frying pan over a medium high heat with olive oil spray and brown beef in two batch seasoned well with salt and black pepper and transfer to slow cooker
- Add the onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins just to light brown. (you can skip these two steps if you prefer, but stew has a better flavour profile if you brown the meat and base)
- Transfer to the slow cooker along with all other ingredients, apart from the cornstarch.
- Cook on low for 7-8 hours
- In a small bowl whisk together cornstarch with approx 2 tablespoons of water so that it is a slurry. Stir this into the stew in the slow cooker, cover and cook on high for an additional 30 minutes.
- Stir in the fresh parsley
- Serve and Enjoy
