A yummy dish that is a satisfying option for breakfast, lunch or even a quick and easy dinner with some homemade oven baked fries.
With more and more people are becoming intolerant to Dairy, I wanted to create a delicious quiche recipe free from a dairy.
Of course, you could just create a frittata using only eggs. However, using dairy-free milk gives it that creamier taste as you'd expect with quiche.

Ingredients in Dairy Free Crustless Bacon and Vegetable Quiche
for this crustless quiche you need the following ingredients.
- lean back bacon or thick ham,
- yellow bell pepper (but can use any colour)
- onion
- zucchini (courgette)
- mushrooms
- fresh ripe tomatoes
- eggs
- almond milk (or other dairy free milk)
- salt and black pepper
- nutritional yeast (optional)
- olive oil spray

Can I use different vegetables?
For the filling, I chose a variety of different vegetables such as peppers, onion, mushrooms, zucchini and tomatoes to really pack flavour .
If you want to add different vegetables or make some swaps, I recommend that you fry any vegetables that might release moisture and then add to a bowl lined with kitchen paper to absorb any extra liquid that gets released.
It will ensure the quiche sets, otherwise the quiche can end up quite wet on the bottom from the moisture released from certain vegetables.
Can I make this vegetarian?
The only ingredient you need to swap out here to make this vegetarian is the bacon and it's equally tasty without.
What is Nutritional Yeast?
Usually, when I make a crustless quiche, I will add some cheese to the top for that cheesy flavour, but as we are keeping this a dairy-free recipe, I have opted for some nutritional yeast instead.
Nutritional yeast is a deactivated form of yeast that is full or minerals and vitamins. Sold in yellow/golden flakes it has a nutty cheese flavour which makes it popular with those who are dairy free or vegan when they want to replicate that cheese taste in a recipe.
Don't have nutritional yeast? Not a problem - the quiche is perfectly fine without nutritional yeast, just make sure the mix is well seasoned with salt and pepper.
Sides for Crustless Quiche
There are plenty of delicious healthy vegetables adding into the quiche, but the perfect way to increase those even further is by serving this with a lovely green salad of your choice. I love this with some mixed baby greens and a low calorie dressing.
It is great served hot or cold, so perfect for packed lunches and picnics and of course because it is crustless it is also gluten-free.
How long will crustless quiche last in the fridge?
Normally crustless quiche will keep about 3 days in the fridge. I place a couple of sheets of kitchen paper on a plate and place the quiche on top and then cover over.
Make sure you allow it to fully cool before you place in the refrigerator.
Reheating Crustless Quiche
Crustless quiche can be enjoyed cold, but to reheat you can place on a place and microwave (I do at increments until heated through) usually takes 2 minutes or you can place in a dish, cover with foil and reheat in the oven at 180c/350f until heated through (approx 20 minutes).

Dairy Free Crustless Bacon and Vegetable Quiche
Enjoy a delicious and healthy alternative to the classic quiche. This dairy free crustless bacon vegetable quiche is packed with protein and flavourful vegetables and is perfect for those who need to avoid dairy.
Ingredients
- 5 lean bacon medallions, chopped
- 1 yellow bell pepper, chopped
- 1 onion, quartered and sliced
- 1 small zucchini (courgette), chopped
- 3 mushrooms, sliced
- 3 medium tomatoes, pulp and seeds removed and diced
- 6 large eggs
- ½ cup (120ml) of almond milk (or other dairy free milk)
- salt and black pepper
- 3 tablespoons of nutritional yeast (optional)
- olive oil spray
Instructions
- Preheat oven to 170c fan, 190c 375f (gas mark 5)
- Spray a frying pan over a medium-high heat with olive oil spray, add the bacon and fry for 5 mins, remove and set aside.
- Add the onion and fry for a couple of minutes till translucent.
- Add in the remaining veg and fry for approx 5 mins.
- line a bowl with some kitchen paper and add the vegetables, just to ensure any excess liquid is removed.
- Whisk the eggs in a bowl with almond milk, nutritional yeast, and salt and black pepper
- Line a deep 7-inch springform pan (or similar size oven proof dish) with some parchment paper
- Add the bacon and vegetables, then pour over the egg mixture, stirring a little bit just to make sure the egg mix goes all the way to the bottom.
- Place in the oven and bake for approx 35-40 mins until golden and set.
- Allow to rest for about 10 minutes removed from the oven before slicing.

No it stays nice and firm. I find it is best if you allow it too cool slightly before serving as you would do with a normal quiche.

Thanks for clearing that up for me - I'm still using an Abacus!! The quiche turned out fantastic and makes you wonder why bother with pastry on a 'traditional' as most people leave that on their plate anyway.
