Whether you fancy shoestring, wedge, or steak-cut fries, mastering the technique is key. Utilize a sharp knife like a santoku knife or invest in a potato chipper (french fry cutter) for effortless transformation of a whole potato into perfectly sized fries.
3. Soak for Crispiness: After slicing the potatoes into your desired chip size, soak them in ice-cold water for 30 minutes. This step removes excess starch, preventing sticking during cooking and ensures a crispier texture, resulting in golden and crunchy chips with a tender interior.
4. To Parboil or Not: For thin fries, skip parboiling. However, for thicker cuts, a brief 5-minute parboil creates a fluffy interior and a crisp exterior.
5. Patting Dry: It's important to pat the chips dry before cooking, either using a clean kitchen towel, or I like to use my salad spinner, which is the perfect gadget for removing excess moisture from washed vegetables/fruits.
6. Oil or Spray Oil: Whether you choose regular oil or spray oil, both are suitable for cooking the chips. Don't hesitate to use a modest amount of oil occasionally to achieve the best results. Just one tablespoon of oil amounts to around 120 calories, and when divided among four servings, it doesn't contribute significantly to the calorie count. Opt for oils with a high smoke point, such as avocado oil, peanut oil, sunflower oil, for the best results in cooking chips

Ingredients

• 1kg of floury potatoes, peeled
• 1 teaspoon of paprika
• ¾ teaspoon of salt
• ½ teaspoon of black pepper
• low calorie spray
• 2 tablespoon of butter, salted
• 1-2 cloves of garlic, minced (or can use 1 teaspoon of garlic powder)
• 4 tablespoon of finely chopped cilantro (coriander)

Instructions

1. Cut the potatoes into fries.
2. Place the cut fries in a large bowl of ice-cold water and let them soak for 30 minutes.
3. Drain the soaked fries and pat them completely dry.
4. Preheat the oven to 200°C (fan), 220°C, 425°F, or gas mark 7.
5. Transfer the fries to a bowl and evenly spray them with low-calorie spray.
6. Add paprika, salt, and black pepper to the fries and toss to coat evenly.
7. Spread the seasoned fries on a large baking sheet lined with parchment paper. Give them another light spray with low-calorie spray.
8. Bake for approximately 30-40 minutes or until the fries are golden all over. Flip them halfway through the cooking time for even browning and spray again with low-calorie spray.
9. Melt the butter in a small bowl in the microwave at 10-second intervals until fully melted. Stir in the garlic until combined.
10. Place the cooked fries in a large bowl. Add the melted butter and garlic mix, toss to coat. Add in the chopped cilantro and toss again.
11. Taste and season with more salt and black pepper if desired.
12. Enjoy!
