A delicious One Pot Beef Stroganoff Pasta that is super is easy to make and a perfect meal for the whole family to dig in and enjoy.

Who doesn’t love beef stroganoff? It’s got to be one of my all-time favourite recipes, perfect with rice, noodles or even potatoes. 

You’ll find a huge variation in recipes for stroganoff, using different cuts of beef, some with chicken and some with just mushrooms if you are vegetarian or just fancy a meat-free recipe. 

The best part of all, of course, is that flavoursome creamy sauce, and making it as low syn as possible can sometimes be a little tricky.

But not with this recipe – cooking the ingredients for this One Pot Beef Stroganoff Pasta in a single pan means the starch from the pasta helps to make that sauce velvety and silky, so that it coats the pasta and beef without the need to add heaps of syns by using ingredients like flour, butter or wine etc.

In fact, the only synned ingredients used in this Amazing One Pot Beef Stroganoff Pasta is some low syn cream cheese (like Philadelphia, but feel free to use a store own brand) and a little dijon mustard.

Yes, I know you could use quark and keep this syn free, but quark can be temperamental as an ingredient, especially in hot dishes and the last thing you want is for it to split and ruin this whole dish.

Using cream cheese will ensure this One Pot Beef Stroganoff Pasta remains lovely and creamy in this recipe and it really is not many syns when divided up, so why on earth would you compromise, just for the sake of a couple of syns?

How can I add a 1/3 speed foods to this One Pot Beef Stroganoff Pasta?

There are mushrooms and onion in this recipe that are of course speed foods but serve alongside some steamed greens or a salad for those additional speed foods. This is great with some steamed tender stem broccoli or some roasted french green beans.

One Pot Beef Stroganoff Pasta

One Pot Beef Stroganoff Pasta

Yield: 4 servings
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

A delicious One Pot Beef Stroganoff Pasta that is super is easy to make and a perfect meal for the whole family to dig in and enjoy.

Ingredients

  • 400g/14oz lean beef sirloin, raw (or similar cut of beef), sliced into small pieces
  • 1 onion, quartered and sliced thinly
  • 3 cloves of garlic, crushed
  • 225g/80z of mushrooms, sliced
  • 1 tsp of paprika
  • 1/2 tbs of Worcestershire sauce
  • 250g/9oz of uncooked pasta (I used farfalle bows)
  • 4 cups/960ml of beef stock
  • 6 tbs of low fat cream cheese (like Philadelphia​) - 6 syns
  • 1 tbs of dijon mustard - 1 syn
  • sea salt and black pepper to season
  • chopped parsley
  • cooking oil spray

Instructions

  1. Spray a frying pan over a medium high heat with some cooking oil spray
  2. Add the beef and a pinch of sea salt and fry till browned, remove and set aside.
  3. Spray the frying pan with some more cooking oil spray
  4. Add the onions and fry for a minute
  5. Add the mushrooms and garlic, plus a little stock to deglaze the pan, reduce the stock down.
  6. Add the Worcestershire sauce and paprika and stir to combine.
  7. Add in the pasta and stock, bring to a boil, reduce heat, cover and let bubble for 8 mins for the stock to reduce down a little.
  8. Remove lid, stir in the cream cheese and mustard and stir until the cream cheese is melted, then return the beef to the pan.
  9. Add lid again and continue to simmer for another 8 mins until the stock has reduced down into a creamy sauce and the pasta is cooked.
  10. Season with salt and black pepper and sprinkle with chopped parsley.
  11. Serve and enjoy!!

    I would like to do this for 6 people but not sure about the stock amount? Do you think I could cook the pasta and add to it and reduce the stock or do you have any advice on the best way to do it? Thanks in advance xx

    The recipe serves 4, so I would add another half of the full amount of stock (and same with other ingredients). Hope that makes sense 🙂

    Wow, my kids Loved it and as a rubbish cook trying to make healthy choices this was simple and it’s going to do 2 lots of meals (I added hald a bag of small frozen veg uncooked 5 mins before the end) so really bulked it out!

    the texture of pasta can be undesirable for some if frozen, but if you have frozen pasta before and are happy with it, then sure it’s okay to freeze

    i know this is random, i am trying to create a slimming friendly chicken and bacon pasta bake. i would like to use these ingredients to make the creamy sauce, would that work ? thanks in advance 😀

    yep it should freeze okay, as with pasta it does become a little overcooked when reheated, but so long as you are fine with that it’s okay to freeze.

    Hi,

    I couldn’t find any beef sirloin but I bought some lean diced beef. Would that be ok to use. Normally I cook lean diced beef for hours so that it’s tender and falls apart. So not sure it will cook properly for this recipe

    if it’s stewing beef I personally wouldn’t recommend as it will require a lot longer cooking time to ensure its tender.
