This is a yummy filling breakfast and a great way to start you day with a ⅓ superfree
Canadian Bacon with Sweet Tomatoes and Mushrooms on a Wholegrain English Muffin

Original – syn free per serving
Extra Easy – syn free per serving
2 wholegrain English muffins (2xHEb) *
4 slices of Canadian Bacon (or use 2 slices of back bacon with fat removed)
8 button mushrooms, sliced
10 cherry tomatoes, halved
1 small onion, sliced
Frylight or Pam spray
fresh Italian parsley, chopped
splash of balsamic vinegar
*the muffins are a HEb in the US and Canada only, so substitute with a HEb serving of whole wheat bread elsewhere
Spray a frying pan with some Frylight or Pam spray over a medium heat.
Add the bacon to one side of the pan and the mushrooms, onion and tomatoes to the other half.
Add a little bit of black pepper and a splash of balsamic vinegar to the tomatoes, mushrooms and onions.
Cook the bacon until golden and the tomatoes, mushrooms and onions until softened and golden.
Toast your muffin/bread.
Top with the slices of bacon and then serve with the tomatoes, mushrooms and onions.
Top with some fresh Italian parsley.
