- English Muffins: I use wholemeal but you can use your preferred type.
- Bacon: for the leanest option, use either Canadian or Bacon Medallions
- Tomatoes: either grape (baby plum) or cherry tomatoes for their sweetness
- Mushrooms: I just used regular white mushroms
- Onion: just a regular onion
- Balsamic Vinegar: adds a depth of flavour and caramelization
- Black Pepper - This basic yet essential flavour enhancer are key for elevating the taste of your dishes. No food will ever be bland when these are used to season to taste. I don't use salt in this dish as the bacon is high in sodium, but you can use if you prefer.
- Low Calorie Spray: - Use your preferred choice of low calorie spray, I prefer olive oil or avocado sprays without any added emulsifiers.

Canadian Peameal Bacon with Tomatoes and Mushrooms
Start your day on a delicious note with a breakfast that combines savory Canadian bacon, juicy tomatoes, and earthy mushrooms atop toasted English muffins. This simple yet satisfying dish offers a burst of flavor and a hearty start to your morning routine.
Ingredients
- 2 Wholemeal/Wholewheat English muffins
- 4 slices of Canadian Bacon or lean bacon medallions
- 8 mushrooms, sliced
- 10 cherry or grape tomatoes, halved
- 1 onion, sliced
- low calorie spray
- Black pepper
- fresh Italian parsley, chopped
- splash of balsamic vinegar
Instructions
- Spray a frying pan with some low calorie spray over a medium heat.
- Add the bacon to one side of the pan and the mushrooms, onion and tomatoes to the other half.
- Add a little bit of black pepper and a splash of balsamic vinegar to the tomatoes, mushrooms and onions.
- Cook the bacon until golden and the tomatoes, mushrooms and onions until softened and golden.
- Toast your muffin/bread.
- Top with the slices of bacon and then serve with the tomatoes, mushrooms and onions.
- Top with some fresh Italian parsley.
- Enjoy!!
