A delicious Thai Chicken Omelette cooked effortlessly in the Air fryer in minutes.

What is a Thai Omelette?
Thai Omelettes are my favourite, a popular street food. They are generally crispy and golden on on the outside and fluffy on the inside, cooked in a good measure of oil so that you get a perfect sizzle as the egg mixture hits the hot pan, which of course is not very low calorie.
Generally a starch is added to give that fluffy texture, trust me when I say don't leave that part out.
I cook this version in the Actifry so that we still get that golden exterior and fluffy texture without the need to use lots of oil.

What can I cook in an Air Fryer?
For most an air fryer is used for making golden chips (fries) or similar, but there really are so many other amazing things that you can make in it.
As well as this omelette, I love to cook curries, sausages, stir fries, chicken and more. It's a great gadget to have because it means you don't need to heat up an oven and it generally cooks a little faster too.

Chicken Khai Jiao
Usually, when enjoying a Thai Omelette, I go meat-free with just some added spring onions. But with some shredded cooked chicken to use up, I figured the additional protein would be filling and delicious.
It was a great sharing lunch for me and my daughter. Once served up, I sliced like a pizza and serve with sweet chilli sauce. Yum

Sides for Thai Omelettes
The easiest option is to serve with this a mixed salad, not really a popular choice with a Thai Omelette, but it is generally what I like to go for. Other great options are some sauteed vegetables of your choice - like mushrooms, peppers etc
It's great for slicing up in a packed lunch along with some different dipping sauces, sweet chilli is my favourite, but it will go well with any you like. Including a drizzle of sriracha and light mayo.
