Variations and Substitutes
These banana granola parfaits are really easy to customise with different fruits, toppings and flavours depending on what you are in the mood for.
- Swap the banana for strawberries, raspberries, blueberries or chopped apple.
- Add a handful of chopped walnuts, pecans or almonds for extra crunch.
- A drizzle of Nutella or chocolate spread makes these feel even more like dessert.
- Peanut butter or almond butter work really well layered through the yoghurt.
- Swap the vanilla yoghurt for coconut yoghurt, Greek yoghurt or banana flavoured yoghurt.
- Add a sprinkle of cinnamon for extra warmth and flavour.
- Chocolate chips are delicious for a little chocolatey addition.
- Swap the golden syrup for honey or maple syrup if preferred.
- Layer in some stewed apples or berries for a different fruity version.
- Crushed biscuits or graham crackers can be added for extra texture if serving as a dessert.
- Toasted coconut flakes work really well with the banana flavours.
- Add chia seeds or flaxseed for extra fibre and texture.

Make Ahead Tips
These parfaits are perfect for making ahead for breakfast or snacks during the week. Layer the yoghurt and fruit into jars or containers and store in the fridge until ready to enjoy.
For the best texture, keep the granola separate and sprinkle it over just before serving so it stays nice and crunchy rather than softening in the yoghurt.

I really like this granola. Is it possible to make homemade low fat yoghurt? I know the Instant Pot has a yoghurt setting but it may be that you can only use full fat milk for this? Would love to know if you have tried to make low fat or fat free yoghurt.
Shevy (Slimming Eats) says
Hi Judith, making yoghurt is something I haven't ventured into yet with the instant pot, but I am pretty sure you should be able to make fat free/low fat yoghurt if you use the same as your starter. There is a great instant pot group on facebook and many on it make there on yoghurt, so you could try enquiring on there. Let me know what you find out, i'd love to know and maybe give it a go. I think I need a new sealing ring though, as I make a lot of curries etc, so don't fancy curry tasting yoghurt lol.
