- Garlic: For convenience, I opt for jarred minced garlic. If you prefer fresh garlic, note that 1 teaspoon of jarred minced garlic is equivalent to 1 clove of fresh garlic.
- Light Cream Cheese: like Philadelphia or a stores own brand (do not mistake this for quark)
- Stock: beef or chicken stock is fine for this recipe. It's essential to use the correct ratio of stock cubes to water, as not all stock cubes are identical. Using too few can lead to a bland, watery broth, while too many may create a stock that's overly salty.
- Salt and Pepper - These basic yet essential flavour enhancers are key for elevating the taste of your dishes. No food will ever be bland when these are used to season to taste.
- Low Calorie Spray - Use your preferred choice of low calorie spray, I prefer olive oil or avocado sprays without any added emulsifiers.

Steak with Creamy Mushroom Peppercorn Sauce
Enjoy the ultimate flavour experience with our Perfectly Cooked Steak smothered in Creamy Mushroom Peppercorn Sauce—a low-calorie delight boasting rich creaminess and a tantalizing hint of peppery goodness, perfect for any night of the week.
Ingredients
- 2 Lean Steaks (such as sirloin, rump or flank) (trimmed of visible fat) - approx 6oz/170g per steak
- 200g (7oz) of cremini or chestnut mushrooms, sliced thinly
- 2 teaspoons of minced garlic
- 80g (2.8oz) of light cream cheese
- 240ml (1 cup) of beef stock
- 1 teaspoon of Worcestershire Sauce
- 2 teaspoons of whole black peppercorn, coarsely crushed
- 1 tablespoon of fresh finely chopped parsley
- low calorie spray
Instructions
- Season both sides of the steaks generously with salt and black pepper.
- Heat a cast iron pan or skillet over medium-high heat and spray it generously with low-calorie spray.
- Add the steaks to the hot pan and cook them for 4-6 minutes on each side until they reach your desired level of doneness.
- While the steaks are cooking, prepare the sauce by spraying an additional frying pan with low calorie oil and heating it over a medium heat.
- Add the mushrooms and crushed garlic to the frying pan, and fry them until lightly golden.
- Stir in the cream cheese, stock, crushed peppercorn and Worcestershire Sauce, and whisk until smooth.
- Reduce the heat and allow the sauce to simmer until it thickens. If the sauce reduces too much, simply add a little more stock.
- While the sauce is simmering, allow the steaks to rest for 5 minutes.
- Serve the steaks with the creamy peppercorn sauce, and garnish with a sprinkle of fresh parsley.
