Hot Honey Parmesan Roasted Potatoes
These Hot Honey Parmesan Roasted Potatoes are golden and full of flavour, finished with a sticky drizzle of hot honey for the perfect balance of savoury and sweet.
Ingredients
- 800g (28oz) of potatoes, peeled and diced into ¾" cubes ( I used yukon golds)
- sea salt
- black pepper
- 1 teaspoon of garlic powder
- 1 tablespoon of olive oil
- 50g of parmesan, finely grated
- 1 tablespoons of hot honey
- small handful of fresh parsley, finely chopped (or can use a couple of teaspoons of dried)
Instructions
- Rinse the peeled potatoes under cold water until the water runs clear to remove excess starch.
- Pat them completely dry with a clean tea towel or kitchen paper, then add to a large roasting tin.
- Sprinkle over the garlic powder and a good pinch of sea salt and some black pepper. Drizzle with the olive oil and toss well to coat. Spread the potatoes out in a single layer on a non-stick oven tray (or you can also line the tray with parchment paper to stop them sticking.)
- Preheat your oven to 180°C fan (200°C / 400°F / Gas Mark 6).
- Roast for 20 minutes, or until the potatoes are just starting to colour.
- Remove from the oven, sprinkle over the parmesan and dried parsley, then toss gently in the pan so everything is nicely coated.
- Return to the oven and roast for another 20 minutes, or until the potatoes are golden and the parmesan is crisp and melted around the edges.
- Drizzle over the hot honey, give everything a final toss, season to taste, and serve. Enjoy!
