Ingredients Notes
To make this recipe you will need the following ingredients:
- Russet potatoes - Starchy and ideal for roasting, they turn golden and crisp on top of the skillet.
- Garlic & Herb Boursin - Creamy and flavour-packed, it melts into the dish with garlicky, herby richness.
- Cheddar & mozzarella - A perfect blend of sharpness and meltiness, creating a rich, gooey cheese layer.
- Extra lean ground beef - Light but hearty, it soaks up all the bold Sloppy Joe flavours.
- Onion, garlic & green bell pepper - A classic trio for building a rich, savoury base with a touch of sweetness and crunch.
- Passata & tomato paste - The tomato base of the sauce-smooth, rich, and full-flavoured.
- Worcestershire sauce, American mustard & maple syrup - A punchy mix of tang, umami, and sweetness that balances the sauce beautifully.
- Beef stock - Keeps everything saucy and flavourful, soaking into the beef.
- Paprika, onion powder & black pepper - A simple blend of seasoning that adds warmth, depth, and a subtle kick.
Once you've gathered all the ingredients and prepared them accordingly, you're all set to create this easy and delightful recipe.

Variations and Substitutes
There are plenty of ways to make this skillet suit your tastes or dietary needs, without losing any of the flavour.
- Meat swaps - You can use turkey or chicken mince if you prefer something lighter. For a vegetarian version, soy mince or a meat-free crumble works brilliantly and soaks up the sauce just like the real thing.
- Sweetener swap - If you don't have maple syrup on hand, honey or brown sugar are easy alternatives that still add a gentle sweetness to balance the sauce.
- No Worcestershire? - Henderson's Relish is a brilliant alternative with the same tangy depth, and it's both vegetarian and gluten-free. You can also use tamari or coconut aminos with a splash of vinegar for a similar effect. Soy sauce works in a pinch too-just be sure to pick a gluten-free one if needed.
- Make it gluten-free - Use gluten-free Worcestershire or swap it for Henderson's Relish . Also check your mustard, beef stock, and tomato paste, as some brands may contain hidden gluten or traces from processing.
- Cheese options - Cheddar and mozzarella are a great combo, but feel free to mix it up with Monterey Jack, Red Leicester, or even a smoked cheese for a deeper flavour.
- Vegetable tweaks - Swap the green pepper for red or yellow for a sweeter touch, or toss courgette or carrots for added bulk and richness.
- No Boursin? - Garlic and herb cream cheese or a soft cheese with chives makes a good stand-in. You'll still get that creamy, herby finish.
Side Suggestions
This Cheesy Sloppy Joe Skillet is hearty enough to stand on its own, but a simple veg side makes it feel more complete. Here are a few of my favourites:
- Roasted courgette (zucchini) - Tossed with olive oil, garlic powder, and paprika for a quick, flavourful side that roasts while the skillet finishes.
- Steamed broccoli - Light, fresh, and great for adding a bit of green to the plate.
- Roasted green beans - Slightly crisp with a touch of caramelised flavour.
- Corn on the cob - Boiled or grilled, it brings a lovely sweetness to balance the richness.
- Steamed mixed vegetables - An easy way to add colour and extra nutrients without fuss.
- Roasted broccoli - For deeper flavour and crispy edges-ideal if you've already got the oven on.
- Sautéed spinach or kale - Wilted down with garlic for something fast and nutritious.
- Coleslaw - Creamy or vinegar-based, it adds crunch and contrast. Try this lighter coleslaw or apple coleslaw
- Simple side salad - A crisp green salad with cucumber, red onion, and a light vinaigrette helps cut through the richness.
Pick one or mix a few for a well-rounded, satisfying meal.

FAQ for Cheesy Boursin Sloppy Joe Potato Skillet
Let the skillet cool completely, then divide into portions and transfer to airtight containers. This makes it much easier to reheat just what you need. Store in the fridge for up to 3 days.
Yes! Reheat individual portions in the microwave until piping hot, or warm through in a pan over medium heat. You can also reheat in the oven-cover with foil and bake at 180°C (350°F) for around 15-20 minutes.
Absolutely. Once cooled, portion into freezer-safe containers and freeze for up to 2 months. Defrost in the fridge overnight, then reheat as above. The texture of the potatoes may soften slightly, but the flavour holds up beautifully.

Hi Shevvy …just done this recipe for the first time and it is absolutely delicious. I only had turkey mince in but couldn’t wait to try it so used that but it still gorgeous and rich tasting. I was a bit confused on the recipe regarding the cheeses. I can’t see the mozzarella on the recipe card just crumble Boursin and cheddar on the top? I looked at method part above and thought I should mix the Boursin into the meat mixture and crumble mozzarella and cheddar on the top which is what I did and was really lovely. Thank you for your brilliant recipes 👍xx
Siobhan (Slimming Eats) says
Hi Anne - mozzarella and cheddar is added at step 5 - top with the cheese means both the cheddar and mozzarella. However I have added both the cheeses in brackets to make it more clear. The boursin is crumbled on top before the cheddar and mozzarella. Hope that helps. I am so glad you enjoyed it.
