Comfort food gets an indulgent upgrade in this Cheesy Boursin Sloppy Joe Potato Skillet, where rich, saucy beef meets golden potatoes, gooey cheddar, mozzarella and creamy crumbled Boursin for a family favourite that’s irresistibly satisfying.
Ingredients
For the Potatoes:
- 800g (28oz) of peeled and diced russet potatoes
- 1 teaspoon paprika
- 1 teaspoon onion powder
- ¾ teaspoon of salt
- olive oil spray
For the skillet:
- 75g (2.6oz) herb and garlic boursin
- 50g (1.8oz) cheddar
- 50g (1.8oz) of mozzarella
- 455g (1lb) of extra lean ground beef (mince)
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 1 green bell pepper, diced
- 1 teaspoon of paprika
- 400g (14oz) of passata
- 2 tablespoon of tomato paste
- 2 teaspoons of worcestershire sauce
- ½ tablespoon of american mustard
- 1.5 tablespoons of maple syrup
- 120ml (½ cup) of beef stock
- salt and black pepper
Instructions
- Prep the potatoes - Add the seasonings to the diced potatoes and toss well to coat. Spread them out on a baking tray lined with parchment paper. Spray generously with olive oil spray.
- Roast the potatoes - Roast in the oven at 200°C / 180°C fan / 400°F / Gas 6 for around 30 minutes, or until golden and cooked through. Give them a shake halfway for even browning.
- Cook the beef mixture - While the potatoes roast, heat a large skillet over medium-high heat. Add the beef, onion, and garlic, breaking up the mince as it cooks. Once the beef is browned, stir in the green pepper, paprika, passata, tomato paste, mustard, Worcestershire sauce, maple syrup, and beef stock.
- Simmer the sauce - Bring the mixture to a boil, then reduce the heat, cover, and simmer for 20–25 minutes, or until thickened and rich. Taste and add additional salt and pepper as needed.
- Assemble the skillet - Once the sauce has thickened and the potatoes are cooked and golden, spoon the potatoes over the beef mixture. Crumble over the Boursin and top with the grated cheese.
- Grill to finish - Place the skillet under the grill (broiler) on a low setting for a few minutes, until the cheese is melted and golden.
