Funfetti Birthday Cake Mug Cake - a delicious vanilla flavour cake scattered with rainbow sprinkles and topped with white chocolate all cooked in a mug in the microwave in just a few minutes.
Over this side of the Atlantic, we seem to have an obsession with all things birthday cake flavoured and let's face it, we are definitely on to a good thing because birthday cake anything is just one of those things that seem to bring out the inner child in all of us.
There is ice cream, oreo's, frozen yoghurt, m&m's, fruit loops, bear paws, the list goes on. If it's a sweet treat, you can guarantee there will be a birthday cake flavoured version.
One of my favourite ice cream places is Cold Stone Creamery, and I first got introduced to that place some many years ago now, in Hawaii on my honeymoon all the way back in 2005. If you have never been or heard of Cold Stone Creamery. Is basically an ice cream parlour, you pick your ice cream flavour, then choose your mix in's and it's all mixed together on a cold marble slab - hence the 'Cold Stone" name.
Can guess what my favourite flavour is from there? The Birthday Cake remix of course, which combines Cake Batter flavoured ice cream with rainbow sprinkles, brownie and fudge. I wouldn't like to guess the syns in one of those and it's been quite a few years since I had one of those, but I still get the cravings for birthday cake flavoured things and so it's important to have a low synned Funfetti Birthday Cake to enjoy when I fancy a treat.
Luckily the delicious low synned icecream by Halo Top do a great Birthday Cake flavour which is prob my favourite out of all of the flavours available. You can read my Halo Top Ice Cream review for full details with syn values.
As well as that I also have this amazing Cake Batter Frozen Yoghurt which is just 5.5 syns per serving.
But one thing I really wanted was cake, a birthday cake, with sprinkles and that yummy vanilla flavour, so just knew I had to attempt a microwave Funfetti Birthday Cake Mug Cake

It took a bit of experimenting to get my mug cakes just right, I hate cakes that are overly eggy or just don't have the right texture and let's face it there are many low syn cakes out there, that just are not worth wasting your syns on.
However these mug cakes really are to die for, and this Funfetti Birthday Cake Mug Cake, may just be the best new addition to my selection.
If you love cake, it is totally worth spending those extra few syns for this, because it seriously is that good. My kids love this and I have had to make it several times before even getting a chance to type this up, but it's a great way to test out the recipe and make sure it is perfect every time and it certainly is.
Just bear in mind that not all microwaves are the same, mine is 1000 watts, so the cooking time is based on that, it may vary for different wattages.

Funfetti Birthday Cake Mug Cake | Slimming World
This recipe is Slimming World and Weight Watchers friendlyExtras Easy - HEb and 5.5 synsWW Smart Points - 10
Ingredients
- 40g of porridge oats - HEb
- ¼ tsp of baking powder
- ⅛ tsp of baking soda
- 1.5 tbs of sukrin (or another sweetener of choice) - 0.5 syns
- 2 level tbs of plain Greek Yoghurt
- ½ tsp of vanilla extract
- 1 large egg white
- 1 tsp of rainbow sprinkles - 1 syn
- 15g of white chocolate chips - 4 syns
Instructions
- Add the oats to a blender and blend till fine.
- Add to a mug
- Stir in the baking powder, baking soda and sukrin.
- Add the yoghurt, vanilla and egg white and stir till all is combined. (make sure all ingredients are mixed and that no dry oats left as it won't cook properly)
- Fold in ¾ of the sprinkles
- Place in the microwave and microwave on full power for 1 minute and 50 secs.
- Remove from microwave and allow to cool.
- Add the white chocolate to a bowl and microwave at 10 sec intervals until melted.
- Carefully spread or drizzle over the top of the cake then sprinkle with the remaining sprinkles.
- Dig in and enjoy!!
Notes
Add some light squirty cream for a few additional syns.
The syns for the baking powder and soda are negligible.
