Mango Salsa - super quick to make, beautiful vibrant colours and fresh delicious flavours with the sweetness of ripe mango and the spicy kick from jalapeno.

This Fresh Easy Mango Salsa is delicious served as a dip or as a side to grilled meats. It is one of my favourite go to salsa recipes, because I love the freshness and the sweetness of the fresh mango with that spicy heat.
When ever I spot some fresh ripe mangos on sale, I always grab one or two just so I can make up some of this.
Forget store bought jarred varieties. Once you taste fresh there is no going back.

Ingredients in Mango Salsa
Some salsa recipes require your to pulse all the ingredients in a food processor so it is more saucy in appearance. But for this mango salsa, just finely dicing is the best, you want to get little flavour burst of each ingredient.
To my mango Salsa I like to use:
- Fresh Ripe Mango
- Jalapeno
- Red Pepper
- Red Onion
- Ripe Tomatoes
- Cilantro (fresh Coriander)
- Cucumber
- Lime Juice
- Sea Salt
Once you've gathered all the ingredients and prepared them accordingly, you're all set to create this easy and delightful recipe.

Variations and Substitutes
There are plenty of easy ways to adapt this mango salsa depending on what you have on hand.
- Swap the mango for pineapple, peaches, nectarines, or watermelon for a different fruity twist.
- Jalapeño can be replaced with red chilli, serrano chilli, or left out completely for a milder salsa.
- Red pepper can be swapped for yellow or orange peppers for a sweeter flavour.
- Use spring onions or shallots instead of red onion if preferred.
- Cherry tomatoes work just as well as regular ripe tomatoes.
- Fresh coriander can be replaced with parsley if you are not a fan of coriander.
- Add avocado for extra creaminess and richness.
- Sweetcorn or black beans make great additions if you want a heartier salsa.
- Cucumber can be left out or replaced with diced courgette for extra crunch.
- Add extra lime juice for a fresher tangier flavour or a drizzle of honey if your mango is not very sweet.
- For extra texture, add chopped red cabbage or finely sliced radish.

What to Serve with Mango Salsa?
If you grilling or barbecuing some protein, then this is the perfect side to serve, it goes amazingly well with a variety of main dishes.
One of my favourites ways to enjoy this Mango Salsa is with these Crispy Cheddar Pita Chips and some of this Pea Guacamole. So so yummy!!
It also makes a great healthy movie snack to share.
How to Store
Store the mango salsa in an airtight container in the fridge for up to 2 days. The flavours become even better as everything sits together, although the vegetables may soften slightly over time.
If making ahead, you can prepare and chop all the ingredients in advance, then stir everything together with the lime juice and salt shortly before serving for the freshest texture.
