To make this recipe you will need the following ingredients:
- Yellow fleshed potatoes: These are the best choice for a lighter mash, as they have a naturally buttery flavour and creamy texture once cooked. They mash up beautifully without needing lots of added butter or cream. I like to use a yellow-fleshed potato such as Yukon Gold, but in the UK Maris Piper or Desiree are great alternatives. You want a potato that gives a creamy mash with plenty of flavour, rather than one that turns dry or fluffy.
- Chicken or vegetable stock: Used to cook the potatoes, this adds much more flavour than plain water and helps keep the mash tasty and savoury. Either works well, so use whichever you prefer.
- Egg: This helps give the mash a richer, silkier finish and adds a little extra body. It blends through the hot potatoes for a lovely smooth texture.
- Salt and black pepper: Essential for seasoning and bringing out all the flavour of the potatoes. Adjust to taste once everything is mashed together.

Variations and Additions
This mash is really easy to adapt, so you can change it up depending on what you are serving it with or just use up what you have on hand.
For extra veg, you can stir through some cooked cabbage for a colcannon-style version, or add green onions for a fresh mild onion flavour. Carrot is another great addition and adds a little natural sweetness and colour, while swede/rutabaga, parsnip or cauliflower all work well too for a slightly different flavour and texture.
If you want a richer, creamier finish, you can mix in some soured cream for extra tang, or add a little cheddar or parmesan for a cheesy twist.
