Jam Doughnut Baked Oats - What are these delicious things you see before you? These are a delicious treat made from oats and filled with a yummy jam centre.

Okay, okay they are not exactly like a deep fried Jam Doughnut, as these use oats which is a slightly different texture and they are baked in the oven, but that aside, they are darn good and make a yummy treat.
I like to make up a batch of these so I can enjoy one with a cuppa or a snack.
Making Baked Oat Doughnuts
But how do I make these Doughnuts, I hear you ask? Well you can just use a normal ole muffin tray (although the shape of these will be a bit off) or you can get one of these handy whoopie pie tins.
You can these on Amazon or from a home/kitchen store. Occasionally I spot them at homesense too.
I know you are wondering what the difference is, as it looks pretty similar to a muffin tray, Well a whoopie pie baking tray, the holes are shallower, so as these donuts cook, they take on a shape not far off a jam doughnut - awesome!!
For blitzing the oats in these Gluten Free Jam Doughnuts you will need a blender. A counter top one is best, as it will get the oats nice and fine, but if an Immersion stick one is all you have, this will work too. I recommend add the oats to a tall container (some immersion stick blenders come with one)

Best Sweetener for Low Calorie Baking
To sweeten these Gluten Free Jam Doughnuts, I like to use Erythitol which is a great naturally derived sweetener. I have tried many different types of sweetener in the past trying to find one that is natural and doesn't have that horrible overpowering aftertase and this is definitely the best. There are various different brands that make it (such as Swerve and Sukrin). For the most part I usually just use some honey or maple syrup, but it's nice to know I can now use this and reduce the calories even further if I need to.
I do not recommend using powdered sweeteners. If you want to use a different type of sweetener ensure it is granulated and you will need to check the packaging to see the sugar to sweetener ratio. Erythritol is generally use like for like with sugar in measurements, other you need less or more so will need to adjust correctly.
Can I use sugar?
I know not everyone likes to use sweeteners, I don't either and that's why Erythitol (naturally derived) is the only one I will use.
However if you prefer to use sugar then that is perfectly fine. I can't say how they will bake with honey or maple syrup because the liquid might effect the dough. So you'd have to trial yourself if you want to use maple syrup or honey.

Best type of Jam
You can really use whatever one you like for this, regular, no added sugar or even what are called fruit spreads. I tend to opt for Raspberry or Strawberry for flavour, but there is no reason why you can't use apricot or pineapple or even some homemade jam if you have it.
Just remember to adjust calories, as different jams will vary.
Can these be frozen?
Yes they sure can, these freeze perfectly, I just pop a sheet of wax paper between each one and place in a freezer friendly tub, the wax paper ensure it's easy to just remove one as you want it.
You can rewarm in the oven too from frozen - yummy!!

I had these little beauties for breakfast today with fresh fruit and coffee, great fun. I'd be happy to have them without the jam as they make a great little cake.

These are so good they should be illegal. Be warned they are not like a regular donut but they are delicious. Made my own low sugar jam to go with them. Thank goodness I had friends over to eat them up. I don't have a whoopie pie dish but improvised ad they turned out a pretty good shape. Will definitely make these again.
