Lime and Chilli Sweetcorn Fritters
Serves 2
2 syns for entire recipe on Green or Extra Easy
Ingredients
2 eggs
2 cups of frozen sweetcorn (defrosted and any water drained)
1 tsp of Thai spice
1/2 tsp of chilli powder or 1 small deseeded red chilli finely chopped
1 small shallot, finely chopped
some fresh coriander finely chopped
1 tbsp of juice from a fresh lime
2 tsp of plain flour (2 syns)
2 spring onions
non stick spray
salt and pepper to season
Method
Add all ingredients, except the spring onions to a bowl, and roughly blend using a hand blender.
Spray a skillet or frying pan with non stick spray and spoon some of the mixture on the pan (The mixture should make 6 medium sized fritters in total), flatten out and then flip after a few minutes a you would do to a pancake. Repeat with more mixture, you may want to set your oven to a low heat and place the cooked ones on a baking tray, to keep hot, while you cook the remainder.
Serve on a bed of mixed salad topped with chopped spring onions. I also added a tablespoon of fat free garlic dressing on top of mine for (1 syn).
