
This delicious dish of Zucchini and Linguine uses my homemade Arugula, Basil and Spinach Pesto and gives you a decent and filling serving for a reasonable about of calories.
This recipe is vegetarian and Weight Watchers friendly

Zucchini and Linguine with Homemade Pesto
Linguine Pasta with sauteed courgettes (zucchini) tossed in a homemade pesto made from Arugula, Basil and Spinach
Ingredients
- 150g (5.5oz) of linguine pasta, uncooked
- 2 courgettes (zucchini), spiralled
- Arugula, Basil and Spinach Pesto - click for recipe
- low calorie spray
- salt and black pepper
Instructions
- Place pasta in a saucepan or boiling hot salted water and cook until al dente.
- Spray a frying pan with some spray oil over a medium high heat, add the spiralled courgette, season with salt and black pepper and saute for a few minutues, until softened.
- Drain pasta, add in the courgette and the pesto and toss to evenly mix.
- Serve and enjoy!!
