Gotta love a quick bowl of fried rice - so quick to make and incredibly tasty with such basic ingredients. This more traditional Chicken Fried Rice is one of my favourites.
But tonight, as I set out to whip up this favourite, I decided to add a little twist to the flavour. I squeezed in some juice from fresh oranges and added the lovely taste of fresh ginger from ginger root.
Just those two ingredients alone make a perfect combo, but when you add them to chicken, rice, and some healthy veggies, it turns into an amazing complete meal.

Ingredients Needed
To prepare this delectable Orange Chicken Fried Rice, here are some notes on the ingredients used:
- Chicken - Boneless Skinless Chicken Thighs: these are the best choice for this recipe as they remain much more tender in a bake and impart a lot of flavour compared to chicken breast, but you can use chicken breast if you prefer
- Garlic: fresh minced garlic, but you can use lazy garlic or garlic paste if you prefer
- Ginger: fresh grated ginger root
- Orange Juice: the juice of one fresh small orange
- Soy Sauce: Just all purpose soy sauce is used here, if you can't get all purpose, use equal amounts of light and dark soy sauce.
- Chilli Flakes: add a little heat and is optional
- Honey - imparts some sweetness and balances the flavours, maple syrup can be used as a substitute
- Kale Slaw Mix: this is just a bag of shredded vegetables perfect for stir fries, if you can't get this swap for any stir fry greens you like
- Courgette (zucchini): this is optional and was just some veg I had to use up.
- Cooked Rice: use cooked long grain rice and make sure it is chilled for this dish otherwise it will become a starchy sticky mess.
- Salt and Pepper - Basic yet essential flavour enhancers; season the dish to taste.
- Low Calorie Spray - I use an olive oil spray without added emulsifiers.

They can be grated, julienned, or even spiraled, shining equally in stir-fries or as a crunchy addition to salads.
Should these convenient kale slaw mixes elude you, fear not. Substitute with any similar stir-fry green mix of your choice. This is a lovely recipe. Due to the cold weather here the supermarket did not have the ingredients, so I used red pepper, broccoli and bean sprouts for the vegetables. For my own twist I added 1 tsp Chinese 5 Spice and 1 tbsp extra soy sauce to the coating sauce. And 1 more each of the 5 spice and soy sauce and 2 scrambled eggs just to warm through. Yum!!
