This Slow Cooker Chicken, Chorizo and Sweet Potato Stew is a hearty, flavour packed meal that brings comfort and richness to any table.
Ingredients
- olive oil spray
- 80g (2.8oz) of chorizo sausage, diced
- 1 medium onion, sliced
- 4 cloves of garlic, crushed
- 8 skinless bone-in chicken thighs (approx 1kg/35oz) - trim of visible fat
- 400g (14oz) can of chopped tomatoes (use a good brand)
- 1 tablespoon of paprika
- ½ tablespoon of ground cumin
- ½ tablespoon of mild chili powder
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of oregano
- salt and pepper
- 2 tablespoons of tomato paste
- 400g (14oz) of cubed peeled sweet potato
- 1 cup (240ml) of chicken stock (I use better than bouillon)
- handful of fresh parsley, chopped (to garnish)
Instructions
- Spray a frying pan with olive oil spray ( you can use the sear function on your slow cooker if it has one), and heat over medium-high. Add the chorizo and cook until golden. Stir in the garlic and onion, and fry until the onion has softened. Transfer everything to the slow cooker.
- Add the remaining ingredients, except for the parsley, and make sure everything is coated in the sauce.
- Cook on low for 6 hours or on high for 3 hours. Taste and season with salt and black pepper as needed.
- Garnish with fresh parsley and enjoy!
