Very quick to make and a lovely sandwich filler. This would also work well on a jacket potato with a side salad.
Lemon Pepper Mayonnaise Chicken
Slimming Eats Recipe
Extra Easy – 1.5 syns per serving (and a HEb if making sandwich)
Original – 1.5 syns per serving (and a HEb if making sandwich)
for the filling
80g of cooked chicken breast, roughly chopped
little juice from a fresh lemon (roughly ½ tablespoon)
2 tablespoons of extra light mayonnaise (1.5 syns)
to make the sandwich
2 slices of whole wheat bread (57g) (HEb)
baby romaine lettuce
sliced roma tomato
Mix the chicken, mayo and lemon in a bowl, season with black pepper.
It really is as simple as that.
Serve in 2 slices of whole wheat bread (as your HEb) with baby romaine lettuce and roma tomato.
If you would prefer to save your HEb, this is a great topper for a jacket potato.
