Hearty Taco Soup
When the kids are off school in the Summer holidays, I always like to ask them what they would like for lunch, as having them at home means I have more time to prepare them something filling and healthy.
Top of the list of requests is always this delicious hearty Turkey Taco Soup. It can be a complete meal in a bowl with various toppings or enjoyed just as it is in a bowl for a lighter meal.
Best Ground Meat for Taco Soup
For taco soup, you can use any ground meat of choice, ground beef is the most popular, but I love using turkey mince (ground turkey) or chicken mince (ground chicken).
With all the seasonings and other ingredients it packed full of flavour whichever you choose to use so go for what you have on hand or what you prefer.
Fresh or Canned Tomatoes for Soup
I love using fresh tomatoes in recipes, they just have a much fresher taste in soup and don't have that acidic taste. I use a Serrated Vegetable Peeler, to effortlessly remove the skins, but you can also score and blanch in a hot water which will make the skins easy to peel.
If you want to use canned tomatoes because that's all you have, then those will work okay, but for best results you can't beat fresh.
Homemade Taco Seasoning
For my taco seasoning, I make my own where I can control what goes into it. It is super easy to make too.
In my seasoning I use:
- 1 tablespoon of chilli powder (mild) - do not use pure indian chilli powder.
- 2 teaspoons of granulated sweetener
- 1 teaspoon of sweet paprika
- 1 teaspoon of cumin
- ½ teaspoon of onion powder
- ½ teaspoon of garlic powder
- ½ teaspoon of oregano
- ¼ teaspoon of smoked paprika (this add a slightly smoky flavour)
- ¼ to ½ teaspoon of cayenne (omit if you don't like spicy)
Just mix it all together in a bowl and it's ready to add to the soup for that delicious taco flavour.
Cooking Taco Soup in a Instant Pot/Pressure Cooker
As well as cooking this stove top, you can also cook this soup in a Instant Pot or Pressure cooker, which is great for when you want to speed up the process.
If you haven’t heard of an Instant Pot or pressure cooker, they are basically a multi cooker that pressure cook, slow cooks, sautes and has settings for soup, chilli, rice, porridge and even makes yoghurt (I haven’t tried that yet).
Some newer models even have a air fryer feature now, where you can crisp or brown you food too.
Toppings for Taco Soup
I like to top my soup with some grated cheddar and a dollop of low fat soured cream or you can use some fat free Greek yoghurt (with a little pinch of salt and fresh lemon juice squeezed in), then finally some fresh chopped cilantro (coriander).
Some other great options are:
- crumbled tortillas
- diced fresh tomatoes
- chopped avocado or guacamole
- cooked rice

Turkey Taco Soup (Stove Top and Pressure Cooker)
Turkey Taco Soup is perfect for when you can't decide between making a chilli or a soup. It's a hearty filling meal in a bowl.
Ingredients
- 1lb (450g) of extra lean turkey mince
- 1 onion, diced
- 2 cloves of garlic, minced
- 250g (9oz) of fresh tomatoes, skinned and chopped
- 1 red pepper, diced
- 1 green pepper, diced
- 170g (1 cup) of frozen corn
- 400g (14oz) can of black beans, drained and rinsed
- 5 tablespoons of tomato paste (puree)
- 4 cups (960ml) of chicken stock - 3 cups (720ml) for Pressure cooker method
- spray oil
- salt and black pepper to taste
For the taco seasoning:
- 1 tablespoon of chilli powder (mild) - do not use pure Indian chilli powder.

Instructions
Instant Pot/Pressure Cooker
- Mix taco seasoning ingredients together in a bowl
- Set instant pot to saute mode
- Add the ground turkey, garlic and onion and fry till turkey is browned
- Stir in the taco seasoning.
- Add all other ingredients apart from the tomato paste and mix well, ensure nothing is stock to the bottom the pan, spoon the tomato paste onto the top (do not stir in)
- Add lid, close valve and set to pressure cook on high for 12 minutees
- Once cooked allow a natural pressure release.
- Switch to saute mode and stir to ensure everything is combined and to thicken the soup a little more if needed.
- Season to taste with salt and black pepper.
- Ladle into bowls and enjoy with your favourite toppings
Stove Top
- Mix taco seasoning ingredients together in a bowl
- Spray a deep pot with spray oil over a medium high heat
- Add the ground turkey, garlic and onion and fry till turkey is browned
- Stir in the taco seasoning.
- Add all other ingredients and mix well
- Bring to a boil, then cover and simmer for approx 30-40 minutes.
- Add a little additional water or stock if soup is too thick and season to taste with salt and black pepper.
- Ladle into bowls and enjoy with your favourite topping.
